Steps:
- 1. -Preheat oven to 350. -Spray one 4x8 loaf pan, set aside. -Peel and core apples, dice and soak in salt water (2c cold water 1/4 tsp sea salt) for 3 minutes, then drain, if you're worried about excess salt you can rinse off with cold water, leave diced apples in strainer for excess water to drain off. There should be roughly 2 cups of diced apples. -Sift together flour, baking powder, apple pie spice and sea salt, set aside.
- 2. In a large mixing bowl, cream together butter, brown sugar and sugar. Mix in sour cream and vanilla. Add eggs and beat until well combined. Slowly mix in flour mixture until just combined. Fold in apples and nuts. Scrape batter (it will be thick) into prepared pan, set aside.
- 3. TOPPING: In a small bowl, whisk together brown sugar, flour, apple pie spice. Cut in butter until like crumbly. Sprinkle over batter. Bake at 350 for 50-60 minutes or until toothpick inserted comes out clean. Set pan on cooling rack for 5 minutes, then turn bread out onto rack. (I made a double batch, hence the extra loaves)
- 4. GLAZE: Whisk together powdered sugar, cream and vanilla, add more cream a little at a time until of drizzling consistency. Drizzle over bread as shown in photo. Then sprinkle with chopped nuts. (You could use milk instead of the cream, but you will need much less)
- 5. Apple Pie Spice: You can buy it ready made or you can make your own. Simply stir together the listed ingredients. You WILL have more than you need. Just store in air tight container or a small zip lock bag until next time you make this. Trust me, there will be a next time!!! :o) Or you can use it for an actual apple pie. *Cardamom...you do not need this, but it does enhance the flavor.
- 6. *I made a double batch which produced 1 large loaf plus 3 small loaves. I use the small loaves for the neighbors! :o)
