Aunt Virginia's table was always a gathering place for the neighborhood so she often bought staples in bulk, something I didn't think about when she asked me to make a double batch of oatmeal cake. The huge Tupperware container that I took to be sugar was actually salt!

Steps:
- 1. Preheat oven 350 degrees. Prepare 9/12" pan Combine oatmeal and hot water. Set aside. Cream the margarine and the sugars well. Add the eggs and vanilla. Mix well Sift together the dry ingredients, and add to the creamed mixture. Add the oatmeal mixture and mix well. Put in the pan and bake 45 minutes.
- 2. In a small sauce pan combine the topping ingredients, minus the coconut. Bring to a boil, remove from heat and add the coconut. Pour over the warm cake and set under the broiler until browned and bubbly. (2-3 min)
