Aunt Nadine's Sweet Potato Pie Recipe - (4.4/5) image

Number Of Ingredients 8

3 pounds sweet potatoes
2 1/2 cups sugar -- to taste
1 teaspoon nutmeg
1 1/2 sticks butter
2 teaspoons vanilla extract
4 eggs
1/2 cup 2% milk
3 graham cracker crusts or frozen deep dish pie crusts, thawed

Steps:

  • Preheat oven to 400 degrees. Boil sweet potatoes (with peel on) until they are tender and falling apart. Peel the potatoes after boiling and then beat/mash the potatoes by hand or with a mixer on medium speed. Remove strings as you are beating the potatoes. Mix remaining ingredients. Pour into pie shells and bake for 50 minutes to 1 hour.

This pie was a disaster! The filling was runny and the crust was soggy. I followed the recipe exactly, but I don't know what went wrong. I will not be making this pie again.
