Bacon, Spinach, and Egg Scramble image

This is my new favorite way to scramble eggs. I don't have the cooking chops to flip an omelet, but I can mix the same ingredients together. It may not be as pretty, but it tastes just as good!

Number Of Ingredients 7

1 egg
2 egg whites
1/2 fresh spinach, chopped
2 slices bacon, sliced
1 tablespoon milk
1 tablespoon shredded cheddar cheese
salt and pepper

Steps:

  • Fry chopped bacon in a non stick skillet.
  • Beat together egg, egg whites, milk, salt, and pepper.
  • When bacon is almost done, add chopped spinach and saute until just wilted.
  • Add egg mixture and scramble.
  • Top with cheddar cheese.

This was a great way to use up leftover bacon and spinach. I added some chopped tomatoes and onions to the scramble and it was even better.

I made this for breakfast this morning and it was delicious! The bacon and spinach added a lot of flavor and the eggs were cooked perfectly. I will definitely be making this again.
