Baked Salmon with Herbed Mayo image

This is the only way we fix salmon now! Easy to make for company and they will love it! The mayo keeps it very moist. I have experimented with different herbs, such as basil, oregano and have even added a few shakes of parmesan cheese!

Time 25m

Number Of Ingredients 5

2-3 lb salmon
1 c mayonnaise
11/2 Tbsp dill, dried
pinch salt
pinch pepper

Steps:

  • 1. Mix together mayo and dill. If using fresh dill you only need 1 tablespoon. Add salt and pepper to taste.
  • 2. Place salmon, skin side down, into a baking pan sprayed with oil or rubbed with olive oil or butter. (I keep the skin on to help keep it from sticking to the pan.)
  • 3. Season lightly with seasoned salt and pepper then generously spread mayo mixture all over the top of the fish. Make it to the thickness you prefer. I had about 1/4 in or so.
  • 4. Bake uncovered in a 450 degree oven until fish is almost done (mine took 15-20 min for fillets which seemed a bit long, but they weren't done.)
  • 5. Then broil until lightly golden.

I was a bit disappointed with this recipe. The salmon was a bit dry and the herbed mayo didn't have much flavor. I think I'll try a different recipe next time.

This baked salmon with herbed mayo was a delightful dish. The salmon was cooked to perfection, flaky and moist, and the herbed mayo added a burst of flavor. I especially loved the crispy skin on the salmon. It was a quick and easy recipe to follow, a
