1 2/3 cups flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup coconut
1/2 cup raisins
2 bananas, chopped
1 egg
1/2 cup milk
1/4 cup brown sugar
3 tablespoons margarine or 3 tablespoons butter, melted
1/3 cup coconut
2 teaspoons brown sugar
2 tablespoons margarine
1/4 teaspoon cinnamon

Steps:

  • Mix dry ingredients, including coconut and banana.
  • Beat egg, add milk and margarine.
  • Add to dry ingredients, mix until moistened.
  • Spoon into muffin pans.
  • Topping------------.
  • Mix and sprinkle over unbaked muffins.
  • Bake at 375 for 25 minutes.
  • Makes 12 muffins.
