Basque-Style Trout with Herbs image

This is a somewhat simplified version of a recipe from 'Basque Cooking and Lore' by Darcy Williamson. Our second home is in SW Idaho, which has a strong Basque community, and we have learned to love the Basque cuisine.

I accidentally overcooked the trout, but it was still good. The sauce helped to add some moisture and flavor.

I substituted parsley for cilantro and it worked out great. The trout was still flavorful and the sauce was nice and creamy.
