I'm making this today for the first time with some awesome organic blackberries. Cobblers are perfect for the pie-crust-challenged baker like me.

BERRY MIXTURE
4 c fresh blackberries, rinsed -- or frozen, thawed and drained
1/2 c sugar (or more to taste)
1 tsp lemon zest, grated
1 Tbsp lemon juice
1/4 tsp cinnamon
1 1/2 Tbsp cornstarch
TOPPING
3 Tbsp sugar
1 c all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
4 Tbsp butter, cold
1/4 c milk
1 egg, slightly beaten

Steps:

  • 1. For the berry mixture: Place the berries, sugar, lemon zest, lemon juice, cinnamon, and cornstarch in a 9x9" baking dish. Stir to coat the berries evenly with the sugar; taste for sweetness and adjust. Set aside for 30 minutes.
  • 2. For the topping: In a medium size bowl, whisk together 3 Tbsp. sugar, flour, baking powder, and salt.
  • 3. Cut the butter in with a pastry blender or fork until the mixture resembles coarse crumbs.
  • 4. With a wooden spoon, stir in the egg and milk until the batter is just moistened.
  • 5. In large spoonfuls, drop the batter mixture over the berries. Bake in a preheated 350º for 30 minutes or until the berries are bubbly and the topping is nicely browned.
  • 6. Serve warm with your choice of vanilla ice cream or whipped cream.
