Beef & Salsa Burritos image

Number Of Ingredients 9

1 1/4 lb ground beef
1 1/2 Tbsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
1 pkg frozen chopped spinach, thawed and drained
1 1/4 c chunky salsa
1 c cheddar cheese, shredded
8 flour tortillas, warmed

Steps:

  • 1. In large nonstick skillet, brown ground beef over medium heat 10 to 12 minutes or until no longer pink, stirring occasionally.
  • 2. Pour off drippings.
  • 3. Season beef with chili powder, cumin, salt and pepper.
  • 4. Stir in spinach and salsa, heat through.
  • 5. Remove from heat stir in cheese.
  • 6. Spoon 1/2 cup beef mixture in center of each tortilla.
  • 7. Fold bottom edge up over filling; fold sides to center, overlapping edges.
  • 8. Makes 8 burritos.

These burritos were easy to make and very tasty. I used ground turkey instead of beef and they turned out great. I will definitely be making these again.

The beef salsa filling was a bit too spicy for me, but I was able to tone it down by adding some sour cream. Overall, these burritos were delicious and I would definitely make them again.
