Time 1h

Yield 4-6 serving(s)

Number Of Ingredients 6

1 1/2 lbs beets
1 tablespoon coarse grain mustard
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1 tablespoon chopped fresh tarragon or 1 teaspoon dried tarragon
salt & pepper

Steps:

  • **Wear rubber gloves when handling beets! Trim beet greens and wash well. Place in 2 1/2 qt saucepan and cover with water. Bring to boil, reduce heat and cook 25-40 minutes (depending on size) until tender. Drain and let cool until you can handle them. Peel beets and cut into slices or wedges. (You can probably use canned beets - just skip this step).
  • Stir together mustard, vinegar, oil, and tarragon. Pour over beets. Season with salt and pepper. Toss and serve hot or at room temperature.

This recipe is missing some important steps. It doesn't say how long to cook the beets or how to make the mustard sauce.

I'm not sure what went wrong, but my beets turned out mushy. I think I might have cooked them for too long.

This dish is a bit too tangy for my taste. I think I would prefer it with less mustard. Otherwise, it's a good recipe.

This dish is a great way to use up leftover beets. I had some roasted beets in my fridge and decided to try this recipe. It was a great success! The sauce was flavorful and the beets were still tender and delicious.

I'm not a big fan of beets, but I decided to try this recipe anyway. I was pleasantly surprised! The mustard and tarragon sauce really helped to balance out the earthy flavor of the beets. I would definitely make this dish again.

This dish is a delightful blend of earthy beets, tangy mustard, and aromatic tarragon. The sweetness of the beets pairs perfectly with the sharpness of the mustard, while the tarragon adds a touch of freshness. I especially enjoyed the crispy shallot
