BISQUICK ZUCCHINI PIE Recipe - (3.1/5) image

3 c. diced, unpeeled zucchini
1 lg. onion, chopped
1/2 c. grated Parmesan cheese
1/2 c. grated cheddar cheese
1/2 c. salad oil
1 c. Bisquick
4 eggs, beaten
1/2 to 1 tsp. parsley
Dash of salt and pepper

Steps:

  • Grease 9-inch pie plate or 9 x 9 square pan. Combine all ingredients. Bake at 350 degrees for 35-40 minutes or until lightly browned.
