Black Bean Oatmeal Burgers image

These burgers are so yummy and packed with lots of fiber! I add extra chopped garlic but it can be adjusted to taste.

Number Of Ingredients 9

1 can(s) 15 oz black beans, drained
1 can(s) 14.5 oz diced tomatoes, drained
4-6 clove garlic, minced
1 tsp ground cumin
1/2 tsp salt
1/2 tsp coursely ground pepper
1 small onion, chopped or 2 green onions, chopped
2/3 c chopped carrots
1 3/4 c rolled oats

Steps:

  • 1. Preheat oven to 400F. Line a baking sheet with parchment paper and brush lightly with oil.
  • 2. Process the first 8 ingredients until blended. Transfer to a bowl and mix in the oats.
  • 3. Form into 8 patties and place on baking sheet. Bake for 10-15 min until firm to the touch. Carefully turn patties over with a wide spatula and place under the broiler for 1-2 min until browned.
