Time 1h30m

Yield 6 servings

Number Of Ingredients 15

1/4 cup gingersnap crumbs
1/4 cup pecan meal (finely ground pecans)
2 tablespoons salted butter
One 8-ounce block cream cheese, at room temperature
One 8-ounce tub mascarpone, at room temperature
1/4 cup sour cream
3 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
Pinch kosher salt
1 tablespoon dark brown sugar
Pinch ground ginger
Pinch ground cinnamon
2 peaches, chopped (about 2 cups)
2 teaspoons bourbon
1 teaspoon lemon juice

Steps:

  • Whisk together the ground gingersnaps and pecans in a small mixing bowl. Melt 1 tablespoon of the butter and stir into the mixture until combined. Place 1 tablespoon of the crumb mixture into the bottom of each of six 4-ounce jars. Press into an even, compact layer. Set aside.
  • To make the filling, place the cream cheese, mascarpone, sour cream, confectioners' sugar, vanilla and salt in the bowl of an electric mixer fitted with the beater attachment. Whip just until smooth, about 1 minute. Drop 3 tablespoons of filling into each jar. Give each jar a few gentle taps against the counter to even out the filling. Secure the lids on top of the jars and refrigerate to set for at least 1 hour.
  • To make the Georgia peach topping, place a large nonstick skillet over medium heat. Add the remaining tablespoon butter and heat until melted. Stir in the brown sugar, ginger and cinnamon. Cook until the sugar dissolves, about 2 minutes. Add the peaches and stir to coat. Add the bourbon and lemon juice. Cook, stirring occasionally, until the peaches are slightly softened, about 3 minutes more. Set aside to cool.
  • Remove the lids from the cheesecake jars. Dollop 1 tablespoon of peach compote on top of each cheesecake. Serve immediately or secure the lids and refrigerate until ready to serve.

Time 2h5m

Number Of Ingredients 11

1 stick plus 3 tablespoons unsalted butter, room temperature
1/3 cup confectioners' sugar
1 2/3 cups unbleached all-purpose flour
3/4 teaspoon kosher salt
6 ounces cream cheese, room temperature
1 teaspoon grated lemon zest, plus 2 tablespoons fresh juice
1/2 cup granulated sugar
2/3 cup heavy cream
3 peaches (1 pound)
1 cup fresh blueberries
Mint leaves, for serving

Steps:

  • Preheat oven to 375°F. Beat butter with confectioners' sugar on medium speed until pale and fluffy, about 3 minutes. Reduce speed to medium-low; add flour and 1/2 teaspoon salt and beat until just combined and crumbly (do not overmix). Press evenly into bottom and up sides of a 9-inch square tart pan with a removable bottom. Dock bottom at 1-inch intervals with the tines of a fork. Freeze 15 minutes.
  • Bake until golden brown and set, 30 to 33 minutes. Let cool completely. (Crust can be kept at room temperature, wrapped in plastic, for up to 3 days.)
  • Beat together cream cheese, lemon zest, 1 tablespoon juice, and 1/4 cup granulated sugar on medium-high speed until creamy. With mixer running, slowly add cream and beat until light and fluffy, 1 to 2 minutes. (You should have about 2 cups.) Spread mixture into crust; refrigerate 1 to 2 hours.
  • Meanwhile, using a vegetable peeler, peel peaches, if desired; cut into 1/2-inch-thick wedges. Transfer to a bowl and stir in berries and remaining 1/4 cup granulated sugar, 1 tablespoon lemon juice, and 1/4 teaspoon salt.
  • Just before serving, spoon macerated fruit over tart and drizzle some of juice from bowl over it. Sprinkle with mint and serve, with any remaining fruit on the side.

Tips:

  • Use ripe peaches: The riper the peaches, the sweeter and more flavorful your tart will be.
  • Don't overmix the cream cheese batter: Overmixing can make the batter tough. Mix just until the ingredients are well combined.
  • Bake the tart until the center is set: The tart is done baking when the center is no longer jiggly.
  • Chill the tart before serving: This will help the tart set and make it easier to slice.
  • Serve the tart with fresh whipped cream or ice cream: This will add a delicious and refreshing touch to the tart.

Conclusion:

This Georgia Peach Cream Cheese Tart is a delicious and easy-to-make dessert that is perfect for any occasion. With its creamy filling, sweet peaches, and buttery crust, this tart is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this tart a try.
