I've watched the film "A Christmas Story" so many times since I was a kid. Now I have a family of my own, so I re-created the mom's meatloaf and mashed potatoes. -Christina Addison, Blanchester, Ohio

Steps:
- Preheat oven to 375°. Place a rack in a 15x10x1-in. baking pan; place a 12x8-in. piece of foil in center of rack. In a large bowl, combine eggs, ketchup, onion, green pepper, crushed saltines, salt and pepper. Add beef; mix lightly but thoroughly. Place over foil rectangle and shape into a 9x6-in. loaf. Bake until a thermometer reads 160°, 50-60 minutes. Let stand 10 minutes before slicing., Transfer meat loaf to a serving plate, discarding foil. Pipe or spread 1 cup mashed potatoes over meat loaf. Sprinkle with parsley. Serve with remaining mashed potatoes.

AUNT LIBBY'S SOUTHERN MEATLOAF
This my 86-year-old Aunt Libby's home-made meatloaf recipe. I finally had her write it down for me last year. You can be sure no one will tell you this meatloaf is dry!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x5-inch loaf pan.
- Mix beef, onion, 1 cup ketchup, bread crumbs, eggs, salt, and pepper together in a bowl. Press beef mixture into a loaf in the prepared loaf pan.
- Mix 1 1/2 cups ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce together in a saucepan; cook and stir over medium heat until sauce is smooth and warm, about 10 minutes. Pour 1/3 the sauce over meatloaf.
- Bake in the preheated oven, basting every 25 minutes with more sauce, until meatloaf is cooked through, 1 to 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Cool in the pan for 10 minutes before slicing.

This is the best meatloaf recipe you will ever taste. The best part is the glaze that cooks on top. It is so sweet and delicious.

Steps:
- Pre heat oven to 350 degrees.
- Spray a 9 x 5 inch loaf pan with non stick cooking spray.
- Stir beef, eggs, onion, ketchup, salt and pepper, oatmeal, 1/2 of tomato soup, and 1 Tablespoon Worcestershire sauce with hands (it really is easier that way).
- Mold and put into loaf pan.
- Stir brown sugar, rest of Worcestershire sauce, and rest of soup and pour over top of loaf.
- Bake for 90 minutes.

Steps:
- Fry the onions in the butter for 15-20 mins until golden and softened. Butter a 900g loaf tin and put in the fridge to chill.
- Heat oven to 200C/180C fan/gas 6. Combine all the ingredients in a large mixing bowl, and work everything together to form a large meatball. Remove the loaf tin from the fridge and transfer the mixture to it - it will look like a lot, but should all fit if you pack it in. Use a spatula to shape the top, so that it resembles a loaf of bread.
- Cover with foil, then bake for 1 hr, or until the loaf reaches 70C on a meat thermometer. Heat grill to medium, then grill the loaf for 5-10 mins until golden on top. Leave to rest in the tin for 20 mins, then carefully tip the loaf onto a carving board or platter. Serve in slices with the usual trimmings, gravy and bread sauce.

- Preheat oven to 350 degrees.
- Saute garlic in 2 tablespoons of oil till lightly brown and onions till translucent. Remove to a bowl. Add a dash of salt and pepper.
- Saute mushrooms in the remaining oil until water is released, about two minutes, and remove them to the bowl. Add more salt and pepper.
- In a bowl, place everything except the eggs and bacon. Paw at it with two forks, combining thoroughly but not overmixing.
