Time 55m

Number Of Ingredients 8

6 medium potatoes
2-3 clove garlic, sliced
2 Tbsp olive oil
2 Tbsp butter
salt and pepper to taste
OPTIONAL:
6 oz cheddar cheese, shredded
2 Tbsp green onion, chopped

Steps:

  • 1. Scrub potatoes but do not peel. Cut a small slice off the bottom (lengthwise) of each potato so it will stand and won't roll.
  • 2. With a sharp knife, carefully slice the potato all the way across in thin slices, being careful not to cut all the way through the bottom. Fan the potato out with your fingers without breaking it.
  • 3. Insert one slice of the garlic cloves between every second or third potato slice.
  • 4. Break the butter up into very small pieces and scatter across the tops of potatoes. Season the potatoes with salt and pepper and drizzle with the olive oil.
  • 5. Bake in a preheated 425-degree oven for about 40 minutes or until done. In the last five minutes of baking time, sprinkle about 1 ounce of cheese over each potato and add the green onion, if desired.

Time 1h

Yield 2 potatoes

Number Of Ingredients 9

1 clove garlic
4 tablespoons (1/2 stick) unsalted butter
2 large russet potatoes,
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 1/2 cups grated Cheddar
1/4 cup sour cream
2 slices cooked bacon, finely chopped
2 chives, sliced

Steps:

  • Preheat the oven to 425 degrees F.
  • Smash a clove of garlic and place it in a small saucepan with the butter. Melt over medium-low heat.
  • Using a sharp knife, make crosswise cuts in each potato about 1/8 inch apart, stopping about 1/4 inch from the bottom. Brush each potato generously with the garlic butter and sprinkle with salt and pepper.
  • Bake the potatoes for 30 minutes, then take them out and re-brush with the remaining butter. Bake for another 15 minutes, then (using tongs because they will be hot) stuff the potatoes with the cheese in between the slices. Sprinkle the remaining cheese on top of the potatoes and cook until the cheese has melted. Top with the sour cream, bacon and chives.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for accordion potatoes because they hold their shape well and have a fluffy texture. You can also use Yukon Gold or red potatoes, but they may not hold their shape as well.
  • Use a sharp knife: A sharp knife will make it easier to cut the potatoes into thin, even slices. This will help them cook evenly.
  • Don't cut the potatoes all the way through: You want the potatoes to stay attached at the bottom so they can fan out when they're cooked.
  • Use plenty of seasonings: Accordion potatoes are a great way to use up leftover herbs and spices. You can also use a pre-made seasoning blend, such as Italian seasoning or garlic salt.
  • Cook the potatoes until they're tender: The potatoes should be cooked until they're tender when pierced with a fork. This will usually take about 30 minutes.
  • Serve the potatoes immediately: Accordion potatoes are best served immediately after they're cooked. They can be served as a side dish or main course.

Conclusion:

Accordion potatoes are a delicious and easy-to-make side dish that can be enjoyed by people of all ages. They're perfect for a weeknight meal or a special occasion. With a few simple ingredients and a little bit of time, you can make a dish that everyone will love.
