TEQUILA ADOBO BBQ SHRIMP

Tequila Adobo BBQ Shrimp image

This shrimp is a treat. I first had this at a restaurant down in Mexico. The taste always stayed in the back of my mind. Someone else had also eaten this dish at Pappadeaux's and I promised to help find the recipe. I found something similar, but couldn't quite get the sauce right. I must have been thinking about it pretty hard, because I had a dream about how to come up with the sauce. It was a simple solution too! Maybe I should have named this "Shrimp with Dream Sauce."

How to Make Tequila Shrimp

Categories     Tequila     Dairy     Sauté     Quick & Easy     Dinner     Lunch     Shrimp     Spirit     Gourmet     Sugar Conscious     Pescatarian     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 4 servings

Number Of Ingredients 7

1 1/2 pounds large shrimp in shell (21 to 25 per pound), peeled and deveined
1 teaspoon kosher salt
2 tablespoons unsalted butter
1/2 cup white or reposado tequila
3/4 cup crema or sour cream
1 scallion, thinly sliced
Accompaniment: rice

Steps:

  • Toss shrimp with kosher salt and 3/4 teaspoon coarsely ground pepper.
  • Heat butter in a 12-inch heavy skillet over medium-high heat until foam subsides, then sauté shrimp, turning, until pink and just cooked through, 3 to 5 minutes. Reduce heat and add tequila, then increase heat to medium-high. Tilt skillet over gas burner to ignite tequila (or ignite with a long match; use caution, as flames may shoot up high). Cook, shaking skillet gently once or twice, until flames subside. Remove from heat and stir in crema. Serve sprinkled with scallion.

Tips:

  • Choose fresh, high-quality shrimp: Look for shrimp that are firm and have a slightly briny smell. Avoid shrimp that are slimy or have a strong fishy odor.
  • Use a large skillet: This will help to ensure that the shrimp are evenly cooked and not crowded.
  • Don't overcrowd the skillet: If you add too many shrimp to the skillet, they will steam instead of sear.
  • Cook the shrimp in batches: If you are cooking a large amount of shrimp, cook them in batches to ensure that they are all cooked evenly.
  • Do not overcook the shrimp: Overcooked shrimp will be tough and rubbery. Cook the shrimp just until they are opaque and pink.
  • Use a flavorful marinade: A marinade will help to add flavor to the shrimp and keep them moist.
  • Serve the shrimp immediately: Tequila shrimp are best served immediately after they are cooked. They can be served as an appetizer or main course.

Conclusion:

Tequila shrimp is a delicious and easy-to-make dish that is perfect for any occasion. With just a few simple ingredients, you can create a flavorful and impressive meal that your family and friends will love. So next time you're looking for a quick and easy weeknight dinner or a party appetizer, give tequila shrimp a try. You won't be disappointed!
