MAMA'S OH-SO-SAVORY LAMB AND EGGPLANT CASSEROLE

Mama's Oh-So-Savory Lamb and Eggplant Casserole image

The basis of this recipe came from my 4th grade teacher's mother who was Armenian, and I've been making it for over 50 years. It is easy to put together, but the longer the stovetop step simmers, the better the casserole will be when served. Leftovers are yummy! You could serve this over rice, if you like, with a green salad. I just serve it in pasta bowls with crusty bread, butter, and a nice glass of red wine. Enjoy!

Time 2h35m

Yield 4

Number Of Ingredients 18

1 (1 pound) eggplant, cut into 1-inch cubes
salt
1 tablespoon olive oil
1 large sweet onion, coarsely chopped
2 large stalks celery, sliced
½ teaspoon ground cumin
2 pinches dried oregano
2 pinches ground dried rosemary
2 pinches paprika
⅛ teaspoon dried mint
1 pinch salt and ground black pepper to taste
1 ½ teaspoons garlic, minced
3 tomatoes, coarsely chopped
1 cup chicken broth
1 (15 ounce) can tomato sauce
1 pound ground lamb
1 tablespoon olive oil
1 lemon, juiced, or to taste

Steps:

  • Place eggplant in a colander set in a bowl or the sink; sprinkle with 1 teaspoon salt and toss to coat. Let eggplant stand for at least 1 hour. Rinse off the bitter liquid and excess salt and drain well.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Stir in onion and celery; cook and stir until onion has softened and turned translucent and celery is fragrant, about 5 minutes.
  • While vegetables are cooking, combine ground cumin, oregano, rosemary, paprika, mint, salt, and black pepper in a small bowl or mortar and pestle and mix well; this is the lamb seasoning (see Cook's Note). Set seasoning aside.
  • Stir eggplant cubes and garlic into the vegetables in the skillet, mixing well, and cook for an additional 5 minutes. Add chopped tomatoes and sprinkle with half of the lamb seasoning mixture. Reserve remaining seasoning. Stir gently and cook for 5 minutes more.
  • Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart casserole dish.
  • Pour chicken broth and half the can of tomato sauce into the skillet and simmer for 10 minutes; add a little water if the sauce starts to get dry. Transfer the sauce to the prepared casserole dish.
  • Return the skillet to the stove over medium-high heat and heat the reserved tablespoon of olive oil over medium heat. Place ground lamb into skillet and sprinkle with remaining seasoning mixture. Brown lamb in the hot oil, stirring frequently, until the meat is evenly browned; it should look like imperfect meatballs.
  • Gently transfer the lamb to the casserole dish, pushing it down into the vegetable mixture so that it is at least partially submerged. Stir fresh lemon juice into the remaining tomato sauce and pour the sauce over the casserole.
  • Bake uncovered for 45 minutes to 1 hour, depending upon how tender you like your vegetables.

BOURANEE BAUNJAN - AFGHAN EGGPLANT WITH YOGURT SAUCE

Bouranee Baunjan - Afghan Eggplant With Yogurt Sauce image

This is my take on the Afghan dish Bouranee Baunjan, and although it is not exactly authentic, it is quite delicious. :) It's a bit of work to put it together, but is not difficult and is worth it.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 12

1 large globe eggplant
salt
oil (for frying)
2 teaspoons olive oil
1 teaspoon butter or 1 teaspoon ghee
1 large onion, sliced thinly
1/2 green bell pepper, seeded and sliced thinly (optional)
1 pinch red pepper flakes, to taste
1 (14 -15 ounce) can chopped tomatoes, with juice
1 cup strained yogurt (also known as yogurt cheese or "chakah")
1/2 teaspoon crushed garlic, to taste
salt, to taste

Steps:

  • Clean the peel of the eggplant, then cut the stem off.
  • Cut into 1/2 inch thick slices (leaving the peel on).
  • Spread slices on a flat surface or tray and sprinkle generously with salt; let sit for 30 minutes, then dry well with paper towels.
  • In a skillet or pan melt the olive oil and butter together over medium low heat; sauté the sliced onion (and green pepper, if using) until nicely browned and slightly caramelized, then stir in the red pepper flakes.
  • Pour oil into a separate deep frying pan (one that has a lid) to cover the bottom of pan; over medium high sauté the eggplant slices on both sides until lightly browned.
  • As the eggplant slices are done, gently squeeze them with tongs to remove as much oil out of them as possible; discard extra oil.
  • Remove extra oil from the deep frying pan, then place one layer of eggplant slices on the bottom of the pan.
  • Place a bit of cooked onion on top of each slice; repeat with another layer of eggplant and cooked onion, until you're out of slices and onion.
  • Pour the chopped tomatoes with their juice over the slices and onion, careful to not dislodge the onion too much.
  • Cover and simmer over medium heat for 15 minutes, then remove cover and simmer another 5 to reduce the sauce a bit.
  • Combine the strained/drained yogurt, crushed garlic to taste, and salt to taste to make the chakah sauce.
  • When eggplant is done, remove from heat then carefully transfer the slices to serving dish (careful not to dislodge the toppings), then top each with a dollop of the chakah sauce.

Categories     Vegetable

Time 50m

Yield 6 serving(s)

Number Of Ingredients 11

4 medium eggplants (1 kg total)
salt
oil (for frying)
2 medium onions, sliced
1 green pepper, seeded, sliced
2 large ripe tomatoes, peeled Salt
1/4 tablespoon hot chili pepper
1/4 cup water
2 cups yogurt (drained overnight)
garlic clove (or more)
salt

Steps:

  • Cut the stems from eggplants and leave peel on. Cut into slices 1 cm (1/2-inch) thick. Spread on a tray and sprinkle slices liberally with salt. Leave for 30 minutes, then dry well with paper towels.
  • Pour enough oil into a deep frying pan (with lid to fit) to cover base well. Fry eggplant until lightly browned on each side. Do not cook completely. Lift onto a plate when browned. Add more oil to pan as required for remaining slices. As oil drains out of eggplants on standing, return this to the pan and add onion. Fry gently until transparent. Remove to another plate.
  • Place a layer of eggplant back into the pan. Top with some sliced onion, green pepper rings and tomato slices. Repeat using remaining ingredients and adding a little salt and the chili pepper between layers. Pour in any remaining oil from eggplant and onion and add the water. Cover and simmer gently for 10-15 minutes until eggplant is tender.
  • To make the chakah. You first need to drain the yogurt over night. Buy a cheese cloth. You can find at Wal-Mart in the craft section, Place plain yogurt inside the cheese cloth over a bowl in the fridge overnight. Squeeze excess liquid out and only use the remaining yogurt inside the cheese cloth.
  • Combine chakah ingredients and spread half of the sauce into base of serving dish. Top with vegetables, lifting eggplant carefully to keep slices intact. Leave some of the juices in the pan. Top vegetables with remainder of chakah and drizzle vegetable juices over it. Serve with Kabaub and Lawash (flat bread).

SAUTéED EGGPLANT

Sautéed Eggplant image

Categories     Bread     Sauce     Eggplant

Yield makes 4 servings

Number Of Ingredients 5

6 or 8 small, 2 or 3 medium, or 1 or 2 large eggplant, about 2 pounds
Salt and black pepper to taste
1/3 cup extra virgin olive oil
1 tablespoon minced garlic, or more if you like
Chopped fresh parsley or basil leaves for garnish

Steps:

  • Peel the eggplant if you like. If you have any doubt about its quality, cut it into 1-inch cubes and place them in a colander. Sprinkle liberally with salt, at least a tablespoon; toss the eggplant to distribute the salt. Let sit in a sink or over a bowl, undisturbed, for at least 30 and preferably 60 minutes. It will shed a good deal of liquid. Squeeze out as much liquid as you can, rinse with fresh water, and pat dry.
  • Put the oil and all but 1/2 teaspoon of the garlic in a large nonstick skillet over medium heat. Two minutes later, add the eggplant; cook, stirring occasionally, until the eggplant is tender and lightly browned, 15 minutes or longer, adjusting the heat as necessary so the eggplant browns as quickly as possible without burning.
  • Add the remaining garlic and cook, stirring, for 1 minute more; taste and adjust the seasoning, then stir in a handful of parsley and cook for a few more seconds. Garnish with some more parsley and serve hot, warm, or at room temperature.
  • Stewed Eggplant with Tomatoes (France)
  • This is good with a few capers, too: In step 3, before adding the garlic, stir in about 2 cups chopped tomatoes (ripe, fresh ones are best, but canned are acceptable). Cook for about 10 more minutes, stirring occasionally, until the tomatoes break up, then add the garlic and proceed.
  • Crunchy Eggplant
  • In step 3, before adding the garlic, stir in about 1/2 cup bread crumbs, preferably fresh (page 580). Cook for about a minute, until they begin to brown, then add the garlic.
  • Basic Sautéed Eggplant, Indian Style
  • In step 2, use butter if you prefer; add 2 cups sliced onion and 1 or more stemmed, seeded, and minced fresh green chiles, like jalapeños. Cook until the onion softens, then add the eggplant and proceed. In step 3, add 1 teaspoon peeled and minced fresh ginger along with the garlic and use cilantro and mint in place of the parsley or basil.
  • Eggplant with Peppers and Yogurt (Middle East)
  • In step 2, cook 2 bell peppers-red, yellow, green, or a combination (or you can use mild poblano chiles), cored, seeded, and cut into strips-with the eggplant, until tender. In step 3, mix the remaining garlic with 1 cup yogurt, beaten until smooth, a tablespoon of extra virgin olive oil, and some salt and pepper. Remove the eggplant and peppers from the pan and pour this sauce over them; serve hot.
  • Eggplant with Pine Nuts (Italy)
  • Just before serving, lightly brown 1/4 cup pine nuts in 2 tablespoons extra virgin olive oil; stir this into the cooked eggplant.

Tips:

  • Choose the right eggplant: Look for small to medium-sized eggplants that are firm and have smooth, unblemished skin. Avoid eggplants that are too large, as they tend to be more bitter. Smaller eggplants, around 5 to 7 inches long are considered to be the most tender and less bitter.
  • Cut the eggplant properly: Cut the eggplant into 1-inch cubes or slices. Make sure the cuts are even so that the eggplant cooks evenly. This will optimize the surface area for absorption of flavors.
  • Salt the eggplant: Salting the eggplant before cooking helps to remove excess moisture and bitterness. Sprinkle the eggplant cubes or slices with salt and let them sit for 30 minutes. Rinse the eggplant thoroughly before cooking to remove the salt.
  • Use high heat: Sautéing the eggplant over high heat helps to create a nice caramelized exterior while keeping the inside tender. This will also reduce the cooking time and prevent the eggplant from absorbing too much oil.
  • Don't overcrowd the pan: When sautéing the eggplant, don't overcrowd the pan. This will prevent the eggplant from cooking evenly and becoming soggy. Cook the eggplant in batches if necessary.
  • Add aromatics and spices: To enhance the flavor of the eggplant, add aromatics like garlic, onions, and ginger, as well as spices like cumin, coriander, and turmeric. Feel free to adjust the measurements based on your preference or available ingredients.
  • Serve immediately: Sautéed eggplant is best served immediately after cooking, while it is still hot and crispy. You can garnish it with fresh herbs like cilantro or parsley for added flavor and color.

Conclusion:

Afghan sautéed eggplant is a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. It is a great way to use up leftover eggplant and is a healthy and flavorful addition to any meal. With its combination of tender eggplant, savory spices, and aromatic herbs, this dish is sure to be a hit with your family and friends.
