GLUTEN-FREE CHOC CHIP OATMEAL MUFFINS

Gluten-Free Choc Chip Oatmeal Muffins image

I took the original recipe found on this site and changed it up to be gluten-free and lower in sugar/fats. These muffins were highly praised, thinking these were too good to be gluten-free! I prefer to cut the fats and sugars in half by using applesauce and agave nectar.

BANANA OAT MUFFINS

Banana Oat Muffins image

Adapted from Recipe# 156338. Went to the pantry and saw that I was out of whole wheat flour. Then I felt creative and wanted to add other things... This was the result. I still was planning to play with the receipt a bit more and add whole wheat flour or something, but the family liked these so much and ate them so fast, I changed my mind. Instead of rice flour I would think another flour would work fine, such as all-purpose, whole wheat, whole wheat pastry or other. I made these small and got 18 muffins, but I like them small. Then I can have two. ;)

2 tablespoons canola oil
3 tablespoons flax seed meal
3/4 cup all-purpose flour
3/4 cup brown rice flour
1 teaspoon vanilla extract
1 1/2 teaspoons baking soda

1/3 cup applesauce
2/3 cup chopped walnuts
1/2 teaspoon cinnamon

Steps:

  • Mix together the wet and dry ingredients.

Time 29m

Yield 16 Cookies, 16 serving(s)

Number Of Ingredients 12

1/2 cup margarine
3/4 cup agave nectar
2 tablespoons flax seed meal
4 tablespoons water
1/4 cup flax seed meal
1 1/2 cups whole wheat pastry flour
1 3/4 cups rolled oats
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon sea salt
3/4 cup raisins

Steps:

  • Preheat the oven to 325°F.
  • Mix together the margarine and agave nectar.
  • In a separate bowl, whisk together 2 Tablespoons flax seed meal with 4 Tablespoons of water. Add to margarine/agave.
  • Add in remaining dry ingredients: 1/2 cup flax seed meal, whole wheat pastry flour, vanilla extract, ground cinnamon, baking soda, sea salt.
  • Mix in oats then raisins on low.
  • Measure about 1/4 cup of cookie dough (I use an ice cream scoop) per cookie onto ungreased cookie sheets and flatten slightly. Cookies do not spread much so you can bake them rather close together.
  • Bake for 12-14 minutes until the edges are slightly browned.

Tips:

  • For a gluten-free version, use certified gluten-free oats.
  • Add your favorite dried fruits, nuts, or chocolate chips to the batter for a more flavorful muffin.
  • If you don't have agave syrup, you can substitute another liquid sweetener, such as honey or maple syrup.
  • Be sure to measure the oats correctly. Too much oats can make the muffins dry.
  • Don't overmix the batter. Overmixing can result in tough muffins.
  • Fill the muffin cups only about 2/3 full. This will prevent the muffins from overflowing.
  • Bake the muffins until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  • Store the muffins in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.

Conclusion:

Agave oatmeal muffins are a delicious and nutritious breakfast or snack option. They are easy to make and can be customized to your liking. With their combination of agave syrup, oats, and other wholesome ingredients, these muffins are sure to become a family favorite. So next time you're looking for a quick and easy breakfast or snack, give agave oatmeal muffins a try!
