AIR FRYER BANG BANG SHRIMP

- In a small mixing bowl, combine mayonnaise, sriracha and sweet chili sauce until well blended. This will become your bang bang sauce. Set aside.
- Working in batches of 6-8 at a time, coat your shrimp in cornstarch until fully covered. Then coat fully in buttermilk and lastly roll in breadcrumbs until fully covered. Place each coated shrimp in the airfryer. Make sure they do not touch.
- Cook in airfryer on 400 degrees for 5 minutes on one side. When cooking time is complete, drizzle a light coat of avocado oil on the cooked side. Flip each shrimp and drizzle an additional layer of avocado oil on the uncooked side. Return to airfryer and cook for an additional 5 minutes.
- When cooking time is complete, remove shrimp from airfryer and set aside. Repeat until all shrimp are cooked.
- In a medium mixing bowl, cover all of the shrimp with the bang bang sauce. Lightly toss until the shrimp are fully covered in sauce.
- Top with parsley (optional) and serve immediately on top of a bed of rice or on their own!

- Clean and dry the shrimp.
- You need three shallow bowls. Add flour, salt and pepper to one bowl, egg to another bowl, and breadcrumbs to the third bowl. Start by coating the shrimp in flour, then dip it in the egg mixture, then coat it with breadcrumbs. Bread all the shrimp this way.
- Preheat air fryer to 400 degrees F for 3-5 minutes.
- Lightly spray air fryer basket with oil and place shrimp in the basket, leaving space between each shrimp. Lightly spray the tops of the shrimp.
- Cook for 3 minutes. Flip shrimp over and cook for an additional 3 minutes. Large shrimp may need more time to cook through. Continue in small batches until all shrimp are cooked.
- Mix the sauce ingredients together in a bowl. Once shrimp are cooked, toss the shrimp in a bowl with the sauce to fully coat.

This is my take on a popular dish from a restaurant chain. My version is made in an air fryer instead of being deep-fried. The end result was perfectly crispy sweet and spicy shrimp.

Steps:
- Set an air fryer for 400 degrees F (200 degrees C).
- Mix mayonnaise, chili sauce, and sriracha sauce in a bowl until smooth. Reserve some bang bang sauce in a separate bowl for dipping, if desired.
- Place flour on a plate. Place panko on a separate plate.
- Coat shrimp first with flour, followed by mayonnaise mixture, then panko. Place coated shrimp on a baking sheet.
- Place shrimp in the air fryer basket without overcrowding.
- Cook for 12 minutes. Repeat with remaining shrimp.
- Serve in lettuce wraps garnished with green onions.
