1 ½ cups buttermilk
½ cup warm water (110 degrees F/45 degrees C)
½ cup margarine
¼ cup white sugar
½ teaspoon baking soda
2 (.25 ounce) packages active dry yeast
2 teaspoons salt
5 ½ cups bread flour

Steps:

  • Proof yeast in warm water.
  • Place the butter or margarine and buttermilk in a small saucepan. Heat slowly until butter or margarine has melted. Cool to lukewarm.
  • Place sugar, salt, baking soda, buttermilk mixture, and yeast in large mixing bowl. Add 3 cups flour one cup at a time, and mix with the dough hook attachment of an electric mixer. Gradually add the remaining flour while continuing to mix. When dough is not sticky, turn out on a lightly floured surface. Knead for several minutes, until the dough is soft and smooth. Place in a greased bowl, and turn once. Allow to rise until doubled in size.
  • Punch down the dough. Divide, and shape into 2 loaves. Place in two well greased 8 x 4 inch bread pans. Allow to rise until dough has risen one inch above pans.
  • Bake in a preheated 375 degrees F (190 degrees C) oven for 30 to 35 minutes. Loaves are done when nicely brown and hollow sounding when thumped.

2 cups whole wheat flour
½ cup all-purpose flour
½ cup oat bran
½ cup wheat bran
½ cup untoasted wheat germ
1 ½ teaspoons baking soda
1 egg
2 ½ cups buttermilk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a loaf pan with cooking spray.
  • Mix whole wheat flour, all-purpose flour, oat bran, wheat bran, wheat germ, and baking soda together in a large bowl.
  • Whisk egg lightly in a small bowl. Whisk in buttermilk. Pour over flour mixture; fold together with a large spoon until batter is moist.
  • Pour batter into the loaf pan and smooth out the top. Use the spoon to trace a "plus" sign from edge to edge across the top.

3 cups all purpose flour
1 1/2 cups shredded bran cereal (such as All-Bran)
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/4 teaspoons ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon baking powder
4 eggs
3 cups sugar
1 cup buttermilk
2 cups canned solid pack pumpkin
2/3 cup vegetable oil

Steps:

  • Preheat oven to 325°F. Butter two 9x5x3-inch loaf pans. Dust pans with flour. Combine first 8 ingredients in medium bowl; stir to blend well. Whisk eggs, sugar and buttermilk in large bowl. Add dry ingredients; stir to combine. Add pumpkin and oil; stir until blended. Divide batter between prepared pans.
  • Bake until tester inserted into center of each loaf comes out clean, about 1 hour 20 minutes. Let loaves cool 10 minutes. Cut around pan sides to loosen loaves, if necessary. 1/2 cup boiling water
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup butter, softened
1/2 cup sugar
1-1/2 teaspoons salt
1 egg, beaten
3-1/2 to 3-3/4 cups all-purpose flour
1 tablespoon butter, melted

Steps:

  • In a small bowl, combine bran and boiling water; set aside. In another bowl, dissolve yeast in warm water. In a large bowl, cream the butter, sugar and salt. Add egg and yeast mixture; mix well. Add bran mixture and 2 cups flour; beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface. Divide dough in half; divide each half into 12 pieces.
