2 c sugar
3/4 c vegetable oil
4 eggs
1 1/2 tsp coconut extract
1/2 tsp almond extract
3 c flour
1 tsp non-aluminum baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c buttermilk
1 1/2 c sweetened coconut
1 c chopped almonds
1 c chocolate chips

Steps:

  • 1. In the bowl of your mixer, blend the sugar, oil, eggs and extracts.
  • 2. In a separate bowl, combine the flour, baking powder, baking soda and salt: add to the sugar mixture, alternating with the buttermilk till just moistened.
  • 3. Fold in coconut, chocolate chips, and almonds.
  • 4. Pour into 2 greased loaf pans and bake at 325 for 60-65 minutes. Done when toothpick comes out clean. Cool for 10 minutes in pans before removing, then cool on wire racks.
  • 5. Yields: 2 loaves

Tips:

  • Use room temperature ingredients. This will help the batter to mix together more smoothly and evenly.
  • Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the batter, making the bread light and airy.
  • Add the eggs one at a time, beating well after each addition. This will help to prevent the batter from curdling.
  • Sift the flour before adding it to the batter. This will help to remove any lumps and ensure that the flour is evenly distributed throughout the batter.
  • Do not overmix the batter. Overmixing can make the bread tough.
  • Bake the bread in a preheated oven. This will help to ensure that the bread cooks evenly.
  • Let the bread cool completely before frosting it. This will help to prevent the frosting from melting.

Almond Joy bread is a delicious and easy-to-make treat that is perfect for any occasion.
