CRANBERRY AND ALMOND RICE PILAF
I've been making this dish for years - it's different from typical rice pilaf dishes in that the cranberries add the sweetness and the tartness that you don't expect in a savory dish. Oh, and it's super hard to fumble.

Sharon Adamczyk of Wind Lake, Wisconsin writes, "With quick-cooking rice, this is a speedy side dish...but the almonds make it special enough to serve to company. It goes well with all kinds of meats."

WILD RICE, ALMOND AND MUSHROOM STUFFING (OR PILAF)
Stashing this gem to use on the side of our Christmas smoked turkey. It may also grace the New Year's table alongside the collards & black-eyed peas & roasted pork shoulder. Found in The New York Times by Martha Rose Shulman - the recipe indicates this makes enough to stuff a 14 - 18 pound turkey, hence my guess at 10 - 14 servings. This pilaf can be made a day or two ahead and kept in the refrigerator to reheat before serving. Nice as it is easily made vegetarian by using vegetable stock.

Steps:
- Bring the stock to a boil in a large saucepan or stock pot, and add the wild rice and salt to taste. When the liquid returns to the boil, lower the heat, cover and simmer 40 minutes, until the rice is tender and has begun to splay. Drain through a strainer, and set aside.
- Heat the oil over medium heat in a large nonstick skillet, and add the onion or shallots. Cook, stirring often, until tender, about five minutes for onions or three minutes for shallots. Add a generous pinch of salt and the garlic. Cook until fragrant, 30 seconds to a minute, and add the mushrooms and the celery. Cook, stirring, until the mushrooms have softened, about 10 minutes. Stir in the rice and the remaining ingredients. Cook, stirring, until the sherry has evaporated. Taste and adjust seasonings.
- Remove from the heat, and allow to cool before stuffing your turkey, or place in an oiled baking dish and cover. Warm for 20 to 30 minutes in a 350-degree oven.

Steps:
- Bring chicken broth and 1 cup water to a simmer in a medium saucepan over medium-high heat. Meanwhile, in another medium saucepan, melt butter over medium-high heat. Add shallots and cook until soft and translucent, about 2 minutes. Add rice and stir to coat.
- Pour heated chicken broth mixture over rice and cover saucepan. Reduce heat to medium-low and cook until all the liquid has evaporated, about 17 minutes.
- Remove rice from heat and fluff with a fork; season with salt. Stir in cilantro and almonds; serve immediately.
Tips:
- To achieve the perfect texture for your almond rice pilaf, it's crucial to toast the almonds until they become fragrant and golden brown. This step enhances their flavor and adds a delightful nutty aroma to the dish.
- When sautéing the onions, be patient and cook them over low heat until they have softened and caramelized. This process brings out their natural sweetness and adds depth of flavor to the pilaf.
- Use high-quality basmati rice for the best results. Its long, slender grains cook evenly and remain separate, resulting in a fluffy and aromatic pilaf.
- For a more flavorful pilaf, consider using a combination of chicken broth and vegetable broth. This blend adds a rich and savory taste that complements the almonds and rice.
- Don't overcrowd the pot when cooking the rice. Make sure there is enough space for the grains to move around and cook evenly. Otherwise, the rice may become mushy or undercooked.
- After cooking, let the pilaf rest for a few minutes before fluffing it with a fork. This allows the rice to absorb any remaining liquid and results in a perfectly separated and fluffy texture.
Conclusion:
Almond rice pilaf is a versatile and flavorful dish that can be enjoyed as a main course or a side dish. With its combination of toasted almonds, caramelized onions, and fluffy basmati rice, it offers a delightful blend of textures and flavors. Whether you prefer a vegetarian or a meat-based version, this pilaf is sure to satisfy your taste buds. So next time you're looking for a quick and easy meal that is both delicious and nutritious, give almond rice pilaf a try. You won't be disappointed!
