SAUERKRAUT
Steps:
- In large mixing bowl, mix cabbage thoroughly with salt, juniper berries, and caraway seeds, using hands or tongs. If using your hands, make sure that they are very clean prior to mixing. Let stand for 10 minutes.
- Pack cabbage mixture down into a large plastic food container. Top with a lid smaller than the opening of the container and place a glass jar filled with the quart of water on top of the lid. Place in cool area overnight (65 to 70 degrees F). In a day, the cabbage should have given up enough liquid to be completely submerged. The jar serves as a weight to keep the cabbage submerged and away from air.
- Check cabbage every other day for approximately 2 weeks and skim the surface of scum, if necessary. Let stand for 4 weeks. Transfer to an airtight container and store in the refrigerator for up to 6 months.

ALTON BROWN'S SAUERBRATEN
I found this on the Food network website, and I served this Saturday night and got a resounding "Wow!" The meat was so tender that it fell apart when I tried to transport it from the pot to the serving platter. Both gravy and the sauerbraten got applause. We served it with mashed sweet potatoes, green bean casserole, and Sister Schubert rolls. Yum!

TRADITIONAL SAUERBRATEN
I found two slightly different hand written versions of this, my Grandmother's recipe. Born in Nekkar am Rhein in the 1904, she naturally learned to cook traditional German meals as a young woman and didn't rely on a cookbook. I try to capture the nuance in this. Serve with potato dumplings.

Tips:
- Choose the right cut of beef. The best cuts of beef for sauerbraten are those that are tough and flavorful, such as chuck roast, bottom round, or brisket. These cuts will become tender and juicy after long, slow cooking.
- Marinate the beef for at least 24 hours. The marinade will help to tenderize the beef and infuse it with flavor. Be sure to use a marinade that contains an acidic ingredient, such as vinegar or wine, to help break down the connective tissue in the beef.
- Brown the beef before braising it. Browning the beef will help to develop its flavor and create a rich, dark sauce. Be sure to brown the beef in a hot skillet over high heat.
- Use a Dutch oven or slow cooker to braise the beef. A Dutch oven or slow cooker is the best way to cook sauerbraten because it allows the beef to cook slowly and evenly. Be sure to add enough liquid to the pot to cover the beef.
- Cook the beef until it is fall-apart tender. The beef should be cooked until it is so tender that it can be easily shredded with a fork. This will typically take at least 2 hours, but may take longer depending on the cut of beef.
- Serve the sauerbraten with traditional German sides. Traditional German sides for sauerbraten include mashed potatoes, red cabbage, and spätzle. You can also serve sauerbraten with a glass of beer or wine.
Conclusion:
Sauerbraten is a delicious and hearty German dish that is perfect for a special occasion. By following these tips, you can make a sauerbraten that is sure to impress your family and friends. So, what are you waiting for? Get cooking!
