1 medium carrot, peeled and thinly sliced
1 medium sweet red pepper, seeded and cut into very thin slices
1 quart water
1 quart low sodium vegetable broth
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1 cup fresh spinach, thinly sliced
1/4 lb fresh mushrooms, thinly sliced
2 ounces angel hair pasta, broken in quarters
3 tablespoons parmesan cheese, grated

Steps:

  • Combine first seven ingredients in a large pot and bring to a boil. Cover, reduce heat and simmer 5 minutes or just until vegetables are tender.
  • Add spinach, mushrooms and angel hair pasta. Simmer 3 to 4 minutes or until pasta is al dente.

1/4 cup KRAFT Zesty Italian Dressing
1 can (28 oz.) diced tomatoes, undrained
1 small onion, chopped
2 cans (14-1/2 oz. each) fat-free reduced-sodium chicken broth
1/2 cup oil
3/4 lb. angel hair pasta, uncooked
1 qt. (4 cups) water
1 cup KRAFT Shredded Cheddar Cheese
1/4 cup sour cream

Steps:

  • Blend dressing, tomatoes and onions in blender until smooth. Pour into stockpot. Bring to boil on medium-high heat. Stir in broth. Simmer on medium-low heat 15 min., stirring occasionally. Meanwhile, heat oil in large saucepan on medium heat. Add pasta; cook 1 min. or until golden brown, stirring constantly. Drain.
  • Add pasta and water to tomato mixture in stockpot; cook on medium-high heat 10 min. or until pasta is tender and about 1/3 of the broth is absorbed. (The pasta should still be somewhat soupy.) Sprinkle with cheese.
  • Top each serving with about 1 tsp. sour cream; swirl lightly with spoon.

1 cup sliced fresh mushrooms
1 cup thinly sliced fresh carrots
1 cup fresh snow peas
1 cup chopped sweet yellow, red or green pepper

2 tablespoons olive oil
2 teaspoons cornstarch
1 cup vegetable broth or chicken broth

  • Cook pasta according to package directions. 10 ounces angel hair pasta, broken in half (capellini)
2 (14 ounce) cans beef broth (ready to serve)
1 (16 ounce) package san francisco style frozen mixed vegetables, broccoli carrots water chestnuts and red peppers (I use Green Giant American Mixtures)
1 cup frozen cut green beans (Green Giant - from 16oz. bag)
1 cup chopped summer squash
2 teaspoons dried basil leaves (or 2 T chopped fresh basil)
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon garlic salt
1 (14 1/2 ounce) can whole tomatoes, undrained,pureed
2 tablespoons grated parmesan cheese
1 tablespoon chopped fresh parsley (optional)

Steps:

  • Combine, in a large sauce pan, the beef broth, all the frozen and fresh vegetables, and spices through the garlic salt.
  • Bring to a boil, reduce heat and simmer covered for about 7-8 minutes.
