4 cloves garlic, pressed or finely chopped
1/2 cup dry white wine
1 (28-ounces) can plum tomatoes, with basil in tomato juice, undrained
1/8 to1/4 teaspoon crushed dried red pepper flakes
1/4 cup chopped fresh basil
1 ( 14- ounce) can peeled, diced tomatoes, drained
Salt and pepper
3/4 to 1 pound peeled, deveined large shrimp, with tails on 1/2 pound dry or 1 (9-ounce) package fresh uncooked angel hair pasta, cooked al dente and drained
Granted parmesan cheese

Steps:

  • Prepare sauce; Heat 1 tablespoon olive oil with 2 cloves garlic in skillet. Stir in wine and cook over high heat until wine is reduced by half. Add undrained plum tomatoes,red pepper flakes and 2 tablespoons chopped basil; cook over high heat, until tomato mixture has thickend, about 8 to 10 minutes. Stir in drained, diced tamatoes, remaining 2 tablespoons basil and salt and pepper to taste. Reduced heat to meduim and cook 4 to 5 minutes. Stir in 1 tablespoon olive oil, if desired. Meanwhile, cook shrimp with 1 to 2 tablespoons olive oil in a grill pan over high heat until done. sprinkling with remaining 2 cloves garlic a minute or two before finished cooking or place shrimp in a shallow baking pan; dizzle with 1 to 2 tablespoons olive oil and 2 garlic cloves and roast in a preheated 500- degree oven 4 to 5 minutes or until cooked through. Serve sauce over hot cooked angle hair pasta and surround with shrimp. Sprinkle with grated Parmesan cheese.

Kosher salt and freshly ground black pepper
16 ounces angel hair pasta
1/4 cup olive oil
1/2 medium yellow onion, grated on a box grater
2 tablespoons sun-dried tomato paste (from a tube)
2 teaspoons crushed red pepper flakes
3 cloves garlic, minced
One 28-ounce can whole peeled tomatoes, hand crushed
A small handful fresh basil leaves, for garnish
Freshly grated Parmesan, for garnish

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook according to the package instructions.
  • While the pasta cooks, heat a 12-inch skillet over medium-high heat. Add the oil and grated onion and saute for 1 minute. Add the sun-dried tomato paste, red pepper flakes and garlic and saute until fragrant, about 1 minute. Add the canned tomatoes, season with salt and pepper and cook, stirring occasionally, until the sauce comes to a simmer and reduces slightly, 5 to 7 minutes.
  • Transfer the pasta to the skillet with the sauce, adding a little pasta water if need be, and toss together. Plate high and mighty and garnish with basil leaves and fresh Parmesan.

1 teaspoon olive oil
1 cup chopped onion
4 cloves garlic, minced
⅜ cup red wine
1 tablespoon white sugar
1 tablespoon chopped fresh basil
1 teaspoon crushed red pepper flakes
2 tablespoons tomato paste
1 tablespoon lemon juice
½ teaspoon Italian seasoning
¼ teaspoon ground black pepper
2 (14.5 ounce) cans peeled and diced tomatoes

Steps:

  • Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.

1 lb angel hair pasta
2 (14 1/2 ounce) cans diced tomatoes with basil and garlic
30 black olives, cut in half
2 teaspoons olive juice
fresh parsley
crushed red pepper flakes

Steps:

  • Directions -
  • Cook 1 (13.25 Oz. Pkg.) Angel Hair Pasta according to package directions and drain. About 5 minutes and make sure your water is boiling with a touch of salt and some olive oil so it doesn't stick. And rinse pasta immediately with cool water so it doesn't continue cooking!
  • In a medium saucepot, heat Diced Tomatoes with Basil and Garlic (and liquid), Olives and Olive Liquid,and crushed Red Pepper to taste over medium-low heat, stirring occasionally, until hot; season with Salt and fresh ground Black Pepper to taste.
  • Place Pasta in a large serving bowl; add Tomato mixture and 1/4 Cup coarsely chopped fresh Parsley. Toss together with tongs and serve immediately garnished with shredded Parmesan Cheese, if desired.

  • I prefer freshly grated Asiago or a nice blend of Romano and Parmesan. Not Kraft -- And freshly ground black pepper large flakes!

One 28-ounce can whole San Marzano tomatoes
1/2 onion
Pinch sugar
3 to 4 fresh basil leaves, torn
2 cloves garlic, grated or made into a paste
EVOO, for drizzling
Sea salt and freshly ground pepper
2 or 3 Italian cherry peppers or Fresno chile peppers
Sea salt
1 clove garlic, very finely chopped
4 tablespoons harissa
1/4 cup chopped pine nuts
1 cup fresh basil leaves
1 cup fresh flat-leaf parsley leaves
1/3 to 1/2 cup EVOO
1/3 cup grated Parmigiano-Reggiano
1 clove garlic, finely grated or made into a paste
Salt and freshly ground pepper
Freshly grated nutmeg
Salt
1 pound spaghetti
Shaved or grated Parmigiano-Reggiano
EVOO, for drizzling

Steps:

  • For the tomato sauce: Put the tomatoes and their juice in the bowl of a food processor. Grate 3 to 4 tablespoons of the onion directly into the food processor so the juice falls into the tomatoes. Add the sugar, basil, garlic and a liberal drizzle of EVOO (about 1 tablespoon), and season with sea salt and pepper. Whizz the mixture up until it's pureed, then transfer it to a small pot. Bring to a simmer over medium-low heat and cook 20 to 30 minutes. (If you're not serving the sauce immediately, cool and then refrigerate it. Any leftovers are delicious on spaghetti with butter and cheese for a more simple supper another night. It also freezes well if you want to make a double or triple batch.) Rinse out the food processor and return the bowl to the base. For the chile paste: Finely chop the chiles (remove the seeds if you want to curb their heat a little). Sprinkle some sea salt over the chiles on the cutting board, then mash in the garlic to form a paste. Mix with the harissa in a small container. Cover and store in the refrigerator. For the pesto: Lightly toast the pine nuts in a small skillet. Let cool completely. Combine the pine nuts, basil, parsley, EVOO, cheese and garlic in the food processor. Season with salt, pepper and a few grates of nutmeg. Pulse until the mixture is well blended, then transfer to a small container. Cover and store in the refrigerator. (The pesto freezes well, so double or triple the batch if you like.) To serve, bring the sauces to room temperature. Reserve one-third of the chile for other uses. Bring a pot of salted water to a boil, then cook the spaghetti until al dente. Reserve 1 cup cooking liquid, then drain the pasta. Meanwhile, reheat the tomato sauce in a small pot over medium-low heat. Put the pasta in a serving bowl, douse with the reserved cooking water and stir in all of the tomato sauce and half of the pesto. Drizzle with EVOO and add 1 tablespoon of the chile sauce at a time, adjusting it to your preferred level of heat. Toss vigorously to combine. Serve with lots of cheese and the remaining chile paste and pesto sauce for stirring in to each person's taste. Finish with another drizzle of EVOO.

1 (4 7/8 ounce) package pasta roni angel hair pasta with herbs
2 cups chopped ham
10 ounces frozen peas

  • In round 3 quart microwavable glass casserole, combine 1 1/2 cups water, milk and butter.
  • Microwave, uncovered, on HIGH 4 to 5 minutes or until boiling.
  • Gradually add pasta while stirring.
  • Separate pasta with fork, if needed.
  • Stir in special seasoning.
  • Microwave, uncovered, on HIGH 4 minutes, stirring gently after 2 minutes.
