MELT-IN-YOUR-MOUTH CROCKPOT MEATLOAF

Melt-In-Your-Mouth Crockpot Meatloaf image

I can't take credit for this recipe. It came from one of my Taste of Home magazine years ago. I can say that it is truly the easiest and best meatloaf EVER! The texture is perfect for sandwiches the next day, and the sauce adds a slight sweetness you don't get from the typical plain ketchup on the top. My picky daughter loves it, which says a LOT She hates finding chunks of onions or peppers in meatloaf and this recipe solves that beautifully. Oh, and it doubles wonderfully if you have a larger crockpot. Use tin foil strips to aid in removal. ENJOY!!

Provided by á-2986

Number Of Ingredients 22

For the Meatloaf:
2 pounds chuck chop meat
1 Large Idaho potato
1 Large onion
2 tablespoons olive oil
2 cups bread crumb flakes
1/2 cup grated Pecorino Romano cheese
2 Eggs
8 ounces mozzarella cheese (cubed)
4 ounces tomato sauce
Salt and pepper to taste
1 teaspoon parsley flakes
1 teaspoon basil flakes
1 teaspoon garlic powder
For the Gravy:
2 cups beef broth
Salt and pepper
3 tablespoons corn starch
1 teaspoon gravy master
1 teaspoon onion powder
1 teaspoon brewed black coffee
1/2 teaspoon parsley

Steps:

  • Grate potato and onion using a box grater. Heat a large frying pan with 2 tablespoons olive oil. Add grated potato and onion, season with salt and pepper, then sauté until light brown about 5-6 minutes. Set aside and allow to cool. In a large bowl mix the meat, bread crumbs, grated cheese, eggs, tomato sauce, parsley, basil and garlic powder. Add the cooled potato and onion, mix well with hands. Transfer mixture onto waxed paper and flatten into a rectangle. Lay cubed mozzarella in the middle of the loaf and fold over all sides to cover. Transfer into a greased pan, rub meatloaf with olive oil and bake in a preheated 375°F oven for 1 hour, uncover. For the Gravy: Heat all ingredients in a saucepan stirring often until it starts to boil. Continue to stir until mixture thickens to preferred consistency. Serve over meatloaf.

Tips:

  • Use high-quality ground beef. This will make a big difference in the flavor of your meatloaf. Look for ground beef that is at least 80% lean.
  • Add plenty of seasonings to the meatloaf mixture. This will help to give it flavor. Some good options include salt, pepper, garlic powder, onion powder, and paprika.
  • Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
  • Form the meatloaf mixture into a loaf shape and place it in a baking pan. Be sure to press the meatloaf mixture firmly into the pan so that it holds its shape.
  • Bake the meatloaf in a preheated oven at 350 degrees Fahrenheit for about 1 hour, or until the internal temperature reaches 160 degrees Fahrenheit.
  • Let the meatloaf rest for 10 minutes before slicing and serving. This will help to keep the juices in the meatloaf.

Conclusion:

Melt-in-your-mouth meatloaf is a classic comfort food that is perfect for a family meal. It is easy to make and can be customized to your liking. With a few simple tips, you can make a meatloaf that is sure to impress your family and friends.
