Categories     main-dish

Time 33m

Yield 4 to 5 servings

Number Of Ingredients 6

2 (1 pound) pork tenderloins, cut in 1/2 crosswise
Vegetable oil
Salt and freshly ground black pepper
1 1/2 cups apple cider
1/2 cup apple cider vinegar
1/4 cup maple syrup

Steps:

  • Heat oven to 500 degrees F and arrange rack in the upper third.
  • Pat pork tenderloins dry with paper towels, brush with oil, and season well with salt and freshly ground black pepper. Heat a large frying pan over medium-high heat. Add 2 pieces of pork tenderloin and cook until brown on all sides, turning occasionally, about 4 minutes. Set pork aside on a baking sheet and repeat with remaining pieces.
  • Place pork in oven and cook until an instant-read thermometer inserted in the middle of the tenderloin registers 145 to 150 degrees F, about 15 minutes. Meanwhile, place pan over high heat, add cider and vinegar and stir, scraping up any browned bits. Cook until mixture is reduced by 2/3, about 8 minutes. Reduce heat to medium, stir in maple syrup and remove from heat until pork is cooked.
  • When pork is ready, remove to a cutting board to rest about 5 minutes. Warm sauce over medium-high heat, add pork and any accumulated juices and spoon sauce over meat to completely coat. When pork is warm, return pork to cutting board and slice thinly. Serve with pan sauce spooned over.

CIDER-GLAZED BRUSSELS SPROUTS

Cider-Glazed Brussels Sprouts image

Simple roasted brussels sprouts get an autumnal upgrade when they are tossed with a tangy, sweet glaze made from apple cider, apple cider vinegar and mustard. If you're making these for Thanksgiving, make the glaze (see Tip) and trim the brussels sprouts in advance, then pop the sprouts into the oven while the turkey rests. Note that this recipe is easily doubled for larger groups: Just use a larger skillet for the sauce and two sheet pans for the sprouts.

Time 40m

Yield 6 servings

Number Of Ingredients 9

2 pounds brussels sprouts, trimmed and halved, quartered if very large
3 tablespoons olive oil
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
2 tablespoons unsalted butter
1/2 cup finely chopped shallots (about 2 medium shallots)
2 cups apple cider
3 tablespoons apple cider vinegar
1 1/2 teaspoons Dijon mustard

Steps:

  • Heat the oven to 400 degrees. Place the brussels sprouts on a sheet pan. Drizzle with the olive oil and sprinkle with 3/4 teaspoon salt and 1/2 teaspoon pepper. Toss well and roast for 25 to 35 minutes, tossing a few times throughout, until evenly browned and tender.
  • Meanwhile, heat the butter in a medium skillet over medium-low. Add the shallots and cook for 6 to 8 minutes, until tender and starting to brown. In a medium-small bowl or glass measuring cup, combine the cider, cider vinegar, mustard, 3/4 teaspoon salt and 1/2 teaspoon pepper and whisk until smooth. Add this mixture to the shallots and bring to a boil.
  • Cook over medium heat for 15 to 20 minutes, until reduced to about 3/4 cup and thickened. (The glaze will continue to thicken as it cools.) Set aside until ready to use.
  • Pour the glaze over the roasted brussels sprouts directly on the sheet pan, toss, and serve.

CIDER-GLAZED APPLES

A spiced cider glaze highlights the sweet and tart flesh of a baked apple that smells almost as good as it tastes.

Categories     Dessert & Treats Recipes

Number Of Ingredients 6

6 Rome Beauty or other firm red apples
Juice and zest of 1 lemon (about 3 tablespoons juice)
1 whole vanilla bean
1 teaspoon ground cinnamon
1 1/2 teaspoons dark-brown sugar
2 cups cider or more if needed

Steps:

  • Heat oven to 425 degrees with rack in center. Core the apples. Using a vegetable peeler, remove half an inch of skin around the top of each apple; reserve peelings. Brush lemon juice inside and around top of each apple to prevent browning. Arrange apples in a 9 by 12 3/4 by 2 1/2-inch roasting pan. Mince the lemon zest, and divide evenly among the apple cavities. Cut the vanilla bean crosswise into six even pieces. Split one small piece lengthwise; scrape out the seeds, and place seeds and split bean into an apple. Repeat for each apple. Divide the cinnamon and brown sugar evenly among the apples. Pour the cider into the pan, and arrange the reserved peelings around the apples.
  • Cook 20 minutes. Remove peelings, and set aside. Baste apples, and continue cooking 15 to 20 minutes more. Insert a knife into base of one apple to see if still firm. (If soft when pierced, transfer apples to a platter, and proceed to step 3.) Baste apples again. If the cider has almost evaporated, add enough fresh cider to cover the bottom of the pan. Continue to cook apples until soft when pierced with a knife, 10 to 20 minutes more. Transfer to a serving platter.
  • Place pan with remaining cider over high heat on stovetop. Cook until the liquid is reduced to a syrupy glaze, 4 to 6 minutes. Garnish each apple with glaze and the reserved peelings, and serve.

APPLE CIDER REDUCTION

Apple Cider Reduction image

I saw a post about this on Facebook and gave it a try. It is now a staple in my fridge. This sauce is incredible on salmon, pork, oatmeal...even over warm apple pie ala mode!!

Provided by CindiJ

Categories     Sauces

Time 2h35m

Yield 2 cups

Number Of Ingredients 2

1/2 gallon apple cider (fresh pressed)
1/2 gallon apple cider (fresh pressed)

Steps:

  • In 6-8 quart stock pan, measure out 2 cups of apple cider.
  • This will be approximately how much you will end up with when finished.
  • Pour in the remaining apple cider.
  • * If it is kept on an unrefrigerated store shelf, DO NOT use it.
  • Place on stove top on medium heat and bring to a low boil .
  • Cook over medium approximately 2-1/2 hours (yes, it does take this long). Stir occasionally (say every 30-45 minutes).
  • As the cider begins to get close to desired level of reduction, the bubbles will get smaller & the boil will look somewhat "foamy". You'll need to reduce the heat slightly at this point so that it doesn't boil up or scorch.
  • Remove from stove and let cool. Cider should be thick - almost like corn syrup or molasses when done.
  • Pour into covered container of your choice (pint jar w/lid or condiment bottle with cap).
  • Store in refrigerator and use as desired.

Yield Makes 4 servings

Number Of Ingredients 8

1 cup unfiltered apple cider
2 tablespoons minced peeled ginger
2 tablespoons minced garlic
3 tablespoons soy sauce
3 tablespoons rice vinegar (not seasoned)
1 tablespoon mild honey
8 rib lamb chops (3/4 inch thick), cut from 1 rack
1 scallion, finely chopped

Steps:

  • Boil cider, ginger, garlic, soy sauce, vinegar, and honey in a small saucepan until reduced to about 1/4 cup, 10 to 12 minutes. Cool completely. Reserve 2 tablespoons glaze for drizzling.
  • Preheat broiler.
  • Pat lamb chops dry and sprinkle with 1/2 teaspoon salt (total). Arrange on rack of a broiler pan and brush top of chops with half of glaze. Broil 3 to 4 inches from heat 3 minutes. Turn over and brush with remaining glaze, then broil 3 to 4 minutes more for medium-rare. Transfer chops to a plate and drizzle with reserved glaze. Let stand 5 minutes, then sprinkle with scallion.

Tips:

  • Choose a flavorful apple cider: Look for a cider that is fresh and has a bold, complex flavor. A good quality cider will make a big difference in the final product.
  • Reduce the cider slowly: Patience is key when reducing apple cider. Bring the cider to a simmer and then let it reduce slowly over low heat. This will help to concentrate the flavors and develop a rich, syrupy texture.
  • Add flavorings: Once the cider has reduced, you can add flavorings to taste. Some popular additions include spices like cinnamon, nutmeg, and cloves; citrus zest; or fresh herbs like thyme or rosemary.
  • Use the glaze immediately or store it for later: Apple cider glaze can be used immediately or stored in the refrigerator for up to 2 weeks. When you're ready to use it, simply reheat it gently over low heat.

Conclusion:

Apple cider glaze is a versatile and delicious way to add flavor to your favorite dishes. Whether you're using it to glaze roasted chicken, vegetables, or even fruit, this simple glaze is sure to impress. So next time you're looking for a way to add a touch of sweetness and complexity to your meals, give apple cider glaze a try.
