Time 3h

Yield 6 to 8 servings

Number Of Ingredients 19

1 1/4 cups all-purpose flour, plus more for dusting
2 teaspoons granulated sugar
1/2 teaspoon salt
1 stick cold unsalted butter, cut into 1/2-inch cubes
1 tablespoon apple cider vinegar
1/4 cup ice water, plus more if needed
1 cup all-purpose flour
1/3 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature
3 pounds mixed apples (such as Golden Delicious, Granny Smith and Gala), peeled and sliced 1/4 inch thick
4 tablespoons unsalted butter, melted
1/3 cup granulated sugar
1/4 cup packed light brown sugar
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon salt

Steps:

  • Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
  • Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
  • Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.
  • Bake the pie on the hot baking sheet until lightly browned, about 30 minutes. Reduce the oven temperature to 350˚ and bake until the apples are completely soft when pierced with a paring knife, 60 to 80 more minutes. (If the topping is getting too dark, cover loosely with foil.) Transfer the pie to a rack to cool completely.

Time 1h15m

Number Of Ingredients 10

1 1/4 cups all-purpose flour (spooned and leveled), plus more for rolling
6 tablespoons unsalted butter, room temperature
1/4 cup packed light-brown sugar
3/4 teaspoon salt
1 recipe Our Favorite Pie Crust
2 tablespoons fresh lemon juice
4 pounds Granny Smith apples (8 to 10)
1 cup granulated sugar
1 cup raisins
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees. Make crumb topping: In a medium bowl, combine 1 cup flour, butter, brown sugar, and 1/4 teaspoon salt. Work with fingers until large clumps form; freeze.
  • On a lightly floured piece of wax paper or parchment paper, roll dough into a 14-inch circle. Carefully fit into a 9-inch deep-dish pie plate, gently lowering dough into bottom and sides of pie plate without stretching (you will have a 2-inch overhang all around). Refrigerate.

  • Bake 45 minutes, then sprinkle apple filling with crumb topping. Continue to bake until golden and bubbling, 30 to 45 minutes more. Cool at least 6 hours before serving.

Provided by Sarah Carey

Categories     Pie & Tarts Recipes

Time 11h45m

Yield Makes one 9-inch pie

Number Of Ingredients 18

3 pounds apples (see cook's note), peeled, cored, and cut into 1/2-inch-thick slices (8 cups)
3/4 to 1 cup granulated sugar
1/2 teaspoon kosher salt (we use Diamond Crystal)
1 tablespoon apple-cider vinegar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cardamom
1/8 teaspoon freshly ground black pepper
Pinch of ground cloves
3 tablespoons unbleached all-purpose flour, plus more for dusting
1/2 recipe Test Kitchen's Favorite Pate Brisée (1 disk)
1 large egg, lightly beaten
6 tablespoons unsalted butter, softened
1/4 cup packed light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon kosher salt (we use Diamond Crystal)
3/4 cup unbleached all-purpose flour
1/2 cup quick-cooking rolled oats

Steps:

  • For the Filling: In a large heatproof bowl, toss together apples, granulated sugar (use 1 cup if your apples are very tart), salt, vinegar, and spices. Let stand at room temperature, stirring occasionally, for at least 3 hours, or refrigerate (covered) up to 24 hours.
  • Stir flour into macerated apple mixture, then set a colander over another bowl and drain, reserving liquid. Transfer liquid to a small saucepan; return apples to bowl. Bring liquid to a boil over medium-high heat, whisking constantly, until thickened to the consistency of loose pudding, 1 to 2 minutes. Stir back into apple mixture.
  • For the Crust: Preheat oven to 400°F, with a rack in bottom third. On a lightly floured surface, roll out disk of dough 1/8 inch thick (about 13 inches in diameter). Fit it into a 9-inch pie dish. Trim overhang to 1 inch, fold edges under, and crimp as desired. Brush edges of crust with egg and fill with apple mixture; refrigerate for 15 minutes (to help crust hold its shape in the oven).
  • For the Topping: In a medium bowl with an electric mixer, beat butter, brown sugar, baking powder, and salt until light and creamy, about 2 minutes. Add flour and oats and beat to combine.
  • Crumble topping over filling and bake for 20 minutes. Reduce oven temperature to 375°F and bake until golden brown all over and bubbling in center, 50 to 60 minutes more. (If the top browns too quickly, tent it with foil.) Transfer to a wire rack and let cool completely, at least 6 hours.

Tips:

  • Choose the right apples. For this recipe, we recommend using a tart apple variety such as Granny Smith or Braeburn. These apples will hold their shape well when baked and will provide a nice contrast to the sweet crumb topping.
  • Don't overmix the dough. When mixing the dough for the crumb topping, be careful not to overmix it. Overmixing will result in a tough crumb topping.
  • Use cold butter. When making the crumb topping, be sure to use cold butter. This will help to keep the topping from becoming greasy.
  • Bake the pie until the crust is golden brown and the filling is bubbling. The pie should take about 45 minutes to bake. Keep an eye on it and remove it from the oven when the crust is golden brown and the filling is bubbling.
  • Let the pie cool before serving. The pie should cool for at least 30 minutes before serving. This will allow the filling to set and the flavors to develop.

Conclusion:

This apple jack crumb pie is a delicious and easy-to-make dessert that is perfect for any occasion. With its flaky crust, sweet apple filling, and crumbly topping, this pie is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to make, give this apple jack crumb pie a try. You won't be disappointed!
