Number Of Ingredients 5

1 gal apple juice
1 gal apple cider (the kind in the refrigerator section)
1 1/2 c sugar (im pretty sure he adds 2 cups)
3 stick long cinnamon sticks
1 l everclear (corn whiskey)

Steps:

  • 1. bring to a boil the apple juice, apple cider, cinnamon sticks and sugar. Stir till sugar dissolves.
  • 2. Once mix is boiling let boil for 5 minutes or so then remove from heat. Let cool to room temp. Then add Liter of Everclear and stir. Remember its deliciously stronger when not chilled but watch out because when it is chilled it dangerously delicious!
  • 3. place in empty wine bottles or whatever you have with one cinnamon stick per container, if you have more than 3 containers just break them in half. When we first made this we just used the juice containers and a glass jar. Then Friends gave us Empty Grey Goose and X Rated bottles so now we use them and wash reuse them.

Time 50m

Yield 6 oz. servings/2gal, 18-22 serving(s)

Number Of Ingredients 8

1 gallon apple juice (unfiltered or the kind in the refrigerated section)
1 gallon apple cider
1/2 cup sugar
1/2 cup light brown sugar
4 -6 cinnamon sticks (or 2 tablespoons of ground cinnamon if no cinnamon sticks)
2 tablespoons mulling spices (if no mulling spices, add the spices you add to apple pie, such as 3 cardamom cloves, 1/2 tsp ground)
1 tablespoon lemon juice (may use 1 tbsp lemon zest instead)
1 liter ever clear grain alcohol (if you would like it stronger add up to a 1/2 liter more of Ever Clear but remember Ever Clear is 15)

Steps:

  • Bring all ingredients EXCEPT EVERCLEAR to a soft boil. Simmer for 30-45 minutes.
  • Let cool and stir in Everclear. If you prefer a clear liquid, strain the mixture before adding the Everclear.
  • I store the majority of it in the juice bottles that it came inches For gifts, I either pour into a mason jar with a fresh cinnamon stick or pretty glass bottle with a cork or stopper.
  • Store in the fridge, serve hot, like regular cider or iced. Also great for mixing into other cocktails.
  • I serve this with Arroz con Leche on cold nights for dessert.

APPLE PIE IN A BOTTLE

Apple Pie in a Bottle image

Here's a drink that's great to take on camping trips with good friends, perfect for sharing around the campfire. This is my own recipe that we take to SCA camping events in the Pacific Northwest (other folks have their "secret" recipes they don't share). You know you have good Apple Pie when you take a sip and you can even taste the crust. :) You don't want to miss out on this one!

Time 5m

Yield 32 ounces

Number Of Ingredients 7

16 ounces organic apple juice
8 ounces absolut red label vodka (100 proof)
4 ounces vanilla Schnapps
8 ounces butterscotch schnapps
1/2 teaspoon lemon juice
1/4 teaspoon apple pie spice
2 cinnamon sticks

Steps:

  • Mix together liquid ingredients; stir in apple pie spice.
  • Pour into a 32 oz bottle, add the cinnamon sticks, and refrigerate for at least a week before serving. (We often just store it in our cool garage, which works fine.).
  • Apple Pie is a group drink, often shared straight out of the bottle with folks all sitting around the campfire.
  • Notes: if you'd like your apple pie somewhat less sweet, add some more organic cider and/or regular apple cider to it, to taste. Also, you can use regular apple cider for the entire amount rather than organic, if you need to, but the organic has a different flavor and a much different "mouth feel" because it has more pulp in it. Get and use the organic, if you can.
  • Note #2: Absolut Red Label has gotten more difficult to find these days. Try to use higher proof vodka if you can, but if the Red Label is too expensive or unavailable, you can substitute another equal quality high proof vodka. Potato vodka can also be used, but check the taste before using to make sure it's something you like the taste of and that it's not too sweet for you. Higher proof is generally drier in taste.

Tips:

  • Choose the right apples: Use a variety of apples that will hold their shape when cooked, such as Granny Smith, Braeburn, or Honeycrisp. Avoid apples that are too soft or mealy, as they will break down during cooking.
  • Peel, core, and slice the apples thinly: This will help them cook evenly and prevent them from becoming mushy.
  • Use a combination of spices: Cinnamon, nutmeg, and allspice are classic apple pie spices, but you can also experiment with other flavors like cardamom, ginger, or cloves.
  • Don't overcook the apples: They should be tender but still hold their shape. Overcooked apples will become mushy and lose their flavor.
  • Use a good quality vodka: The vodka will contribute to the overall flavor of the schnapps, so it's important to use a brand that you enjoy drinking.
  • Let the schnapps age for at least 2 weeks: This will allow the flavors to mellow and develop.

Conclusion:

Apple Pie Schnapps is a delicious and easy-to-make homemade liqueur that is perfect for enjoying on a cold winter night. With its warm and inviting flavor, it's sure to be a hit with your friends and family. So next time you have a few extra apples on hand, give this recipe a try. You won't be disappointed!
