Time 3h

Number Of Ingredients 5

1 bone-in fully cooked half ham (about 10 pounds), rind removed
1 1/2 cups apricot jam
1 1/2 cups bourbon
1/4 cup lemon juice (from 2 lemons)
1/2 teaspoon ground pepper

Steps:

  • Preheat oven to 375 degrees, with rack in lower third. Wrap ham in a large piece of parchment-lined foil and place, cut side down, on a foil-lined rimmed baking sheet; bake 1 hour. Meanwhile, in a medium saucepan, bring jam and bourbon to a rapid simmer over medium-high. Cook until reduced by half, about 40 minutes. Stir in lemon juice and pepper and cook 2 minutes. Reserve 1 cup glaze for serving.
  • Remove ham from oven and increase temperature to 425 degrees. Unwrap ham, carefully flattening parchment-lined foil against baking sheet. With a sharp knife, score fat with long cuts, 1/2 inch apart. Bake 15 minutes.
  • Remove ham from oven and brush all over with some glaze. Bake until ham is deep golden brown and an instant-read thermometer inserted in thickest part registers 145 degrees, 45 to 60 minutes, brushing ham with glaze every 15 minutes (wrap tip of bone in foil if it begins to overbrown). Transfer ham to a carving board, tent with foil, and let rest 30 minutes before carving. Serve warm or at room temperature with reserved glaze.

APRICOT-GLAZED HAM

Provided by Katie Lee Biegel

Categories     main-dish

Time 2h55m

Yield 8 to 10 servings

Number Of Ingredients 9

One 7- to 8-pound cured smoked ham, bone in
2 cups apricot jam
2 tablespoons unsalted butter, plus more for greasing the foil
2 tablespoons Dijon mustard
2 tablespoons minced fresh sage
1 tablespoon red wine vinegar
1 bay leaf
Pinch of ground cloves
Pinch of cinnamon

Steps:

  • Preheat the oven to 375 degree F.
  • Place the ham on a roasting rack in a roasting pan with the fat-side up. Use a knife to lightly score the fat in a diamond pattern, taking care not to cut into the meat. Bake the ham for 1 hour.
  • While the ham is baking, make the glaze. In a small saucepan, combine the jam, butter, mustard, sage, vinegar, bay leaf, cloves and cinnamon over medium-low heat. Cook, stirring, until the glaze is thin and syrupy.
  • After the ham has baked 1 hour, brush with about half of the glaze and return to the oven. Cook, glazing the ham every 15 to 20 minutes, until the internal temperature reaches about 130 degrees F, 1 to 1 1/2 hours longer. If the glaze starts to burn, tent with a piece of greased foil.
  • Remove the ham from the oven and tent with a piece of greased foil. Let rest for about 10 minutes before carving.

Tips:

  • To ensure the ham is cooked thoroughly, use a meat thermometer to check the internal temperature. It should reach 140°F (60°C) for a medium-rare ham, 145°F (63°C) for a medium ham, and 150°F (66°C) for a well-done ham.
  • If you don't have a meat thermometer, you can also check the doneness of the ham by inserting a fork into the thickest part of the ham. If the juices run clear, the ham is cooked.
  • Let the ham rest for at least 15 minutes before carving. This will allow the juices to redistribute throughout the ham, making it more tender and flavorful.
  • To make sure the glaze doesn't burn, baste the ham frequently with the apricot bourbon glaze during the last 30 minutes of cooking.
  • Serve the ham with roasted vegetables, mashed potatoes, or your favorite side dishes.

Conclusion:

This apricot bourbon glazed ham is a delicious and easy-to-make dish that is perfect for a special occasion dinner.
