ZESTY APRICOT GLAZED SALMON

Zesty Apricot Glazed Salmon image

This sounds great!! It is made with jalapenos, mustard, and apricot preserves. It was a Guy Fieri Foodnetwork recipe that I simplified. The glaze should be cooked then cooled, so add about 30 minutes for the cooling step.

APRICOT-BALSAMIC-GLAZED SALMON

Apricot-Balsamic-Glazed Salmon image

This is a wonderfully simple and tasty recipe from the Oct/Nov 2004 issue of Cooking Pleasures magazine. It's so good I don't bother making salmon any other way.

Time 31m

Yield 2 serving(s)

Number Of Ingredients 6

1/4 cup apricot preserves
2 tablespoons balsamic vinegar
1 teaspoon minced gingerroot
3/4 teaspoon minced garlic
1/8 teaspoon salt
2 (6 ounce) salmon fillets

Steps:

  • Heat oven to 425 degrees F. Line shallow baking pan with foil; spray with non-stick cooking spray.
  • In small saucepan, add all ingredients except salmon. Heat 3-4 min or until slightly thickened, stirring occasionally. Remove from heat; cool slightly.
  • Place salmon on baking sheet; top with glaze. Bake 10-12 min or until salmon begins to flake.

Tips:

  • Use fresh salmon. Fresh salmon has a brighter color and a firmer texture than frozen salmon. If you're using frozen salmon, thaw it in the refrigerator overnight before cooking.
  • Cook the salmon until it is just cooked through. Overcooked salmon is dry and flaky. To check if the salmon is cooked through, insert a fork into the thickest part of the fish. If the fork comes out clean, the salmon is cooked.
  • Make sure the glaze is thick enough to coat the salmon. If the glaze is too thin, it will run off the salmon and not stick. To thicken the glaze, simmer it for a few minutes until it reduces by about half.
  • Serve the salmon immediately. Salmon is best served hot, right out of the oven. If you need to keep the salmon warm, place it in a warm oven (about 200 degrees Fahrenheit) until you're ready to serve it.

Conclusion:

Apricot glazed salmon with herb rice is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The salmon is cooked to perfection and the apricot glaze is sweet and tangy. The herb rice is a flavorful and aromatic side dish that complements the salmon perfectly. This dish is sure to please everyone at your table.
