Tips for a Perfect Artichoke Gratin:

  • Choose fresh artichokes: Look for artichokes that are heavy for their size, have tightly closed leaves, and a deep green color.
  • Prepare the artichokes properly: Trim the stems and remove the tough outer leaves. Cut the artichokes in half lengthwise and scoop out the fuzzy choke with a spoon.
  • Use a good quality cheese: The type of cheese you use will greatly affect the flavor of the gratin. Use a flavorful cheese that melts well, such as Gruyère, Parmesan, or a combination of both.
  • Don't overcook the artichokes: Artichokes should be tender but still slightly firm. Overcooking will make them mushy.
  • Serve the gratin immediately: Artichoke gratin is best served hot and fresh out of the oven.
