2 cups water
4 tablespoons olive oil, divided
1 cup basmati rice
1 large onion, chopped

SIMPLE BAKED RICE

Simple Baked Rice image

Rice infused with garlic and onion baked in chicken stock. A wonderfully simple dish even picky eaters will enjoy. I use homemade stock as it's the most flavorful, but use whatever you have on hand. Another option is adding whatever leftover veggies or meat I have to make a simple casserole without a heavy cream sauce. This recipe uses a rice-to-liquid ratio of 2:1 for long-grain rice.

BAKED RICE

Baked Rice image

This recipe, from the chef Yotam Ottolenghi, is richly spiced and flavorful, a dish that would pair with almost any grilled or roasted meat. Try it sometime with a Sunday roast chicken and a pile of greens, a comforting spread as the weekend slides away.

Categories     side dish

Time 1h15m

Yield Serves 6 to 8

Number Of Ingredients 8

1/3 cup extra-virgin olive oil
2 heads garlic, cloves peeled
12-14 medium-size shallots, peeled and quartered lengthwise
Zest of 1 lemon
2 whole sprigs fresh curry leaves, left on stem, or substitute a handful of dry curry leaves
2 cups basmati rice
2 teaspoons kosher salt, or to taste
1/2 teaspoon saffron threads, soaked in 2 tablespoons boiling water for 30 minutes

Steps:

  • Heat oven to 425. Put the oil into a sauté pan set over medium heat. When the oil shimmers, add the garlic cloves, shallots and lemon zest, and cook, tossing occasionally, for about 15 minutes, until the garlic is golden brown and soft. Add the sprigs of curry leaves, and cook for approximately 2 minutes more, or until the leaves are starting to crisp.
  • Pour the garlic and shallots into a large ovenproof baking dish, approximately 10 by 14 inches, and spread the rice over the vegetables in an even layer. Sprinkle 2 teaspoons of salt over the rice, and then pour 3 1/2 cups of boiling water over the rice. Cover the dish tightly with aluminum foil, and place in the oven for 30 minutes or so, until all the water has been absorbed and the rice is light, fluffy and starting to turn crisp around the edges.
  • Remove the dish from the oven, uncover and drizzle the saffron and its soaking water over the dish. Re-cover the dish with aluminum foil, and allow it to sit on the stovetop for another 5 or 10 minutes, then serve.

BAKED MEXICAN RICE

Baked Mexican Rice image

I've tried a lot of variations on baked rice, and wanted to try it with Mexican flavors. It's so easy to let the rice bake away while you take care of other things, or prep the rest of the meal. Garnish with additional green onions if you like.

Time 55m

Yield 6

Number Of Ingredients 14

1 ½ cups parboiled rice (such as Uncle Ben's®)

2 large green onions, sliced
1 (.18 ounce) packet sazon seasoning with saffron (such as Goya® Azafran)
1 teaspoon ground cumin

Tips:

  • Use high-quality ingredients for the best flavor. This includes using fresh vegetables, herbs, and spices.
  • Rinse the rice before cooking to remove any dirt or debris.
  • Toast the rice in a little oil before adding the liquid. This will help to give the rice a nutty flavor and prevent it from sticking together.
  • Use a heavy-bottomed pot or Dutch oven for cooking the rice. This will help to distribute the heat evenly and prevent the rice from burning.
  • Bring the liquid to a boil before adding the rice. This will help to prevent the rice from becoming mushy.
  • Reduce the heat to low and simmer the rice for the recommended amount of time. Do not lift the lid during cooking, as this will release steam and prevent the rice from cooking evenly.
  • Once the rice is cooked, remove it from the heat and let it stand for 5 minutes before fluffing with a fork.
  • Serve the rice immediately or store it in an airtight container in the refrigerator for up to 3 days.

Conclusion:

Assyrian baked rice is a delicious and versatile dish that can be served as a main course or a side dish. With its combination of savory flavors and textures, it is sure to please everyone at the table. Whether you are looking for a quick and easy meal or a special occasion dish, Assyrian baked rice is a great choice.
