ATHENIAN FISH (20 MINUTE MEAL)
A low calorie and SPEEDY recipe from Family Style Spring 2009, a Publix Publication. They say tilapia, snaper or mahi mahi all provide great results; I made it with grouper and that worked well. They also recommend serving with a salad of cucumbers, tomatoes and feta along with some pita bread and hummus.

10 MINUTE MEAL
Ramen has been a standby over years of back packing, motor camping and desert 'prospecting' where conserving water and cooking fuel were always at the front of our minds. A home made dehydrator added light weight, easy to use jerky and vegetables to the pot. Now any time I want a quick meal, as often as not it's Ramen. It's inexpensive, quick, and delicious. What more would you want?

Tips:
- Fresh Fish is Key: Use the freshest fish possible for the best flavor. If you're not sure how to tell if fish is fresh, ask your fishmonger or look for bright, clear eyes, firm flesh, and a mild, briny smell.
- Don't Overcook: Fish cooks quickly, so be careful not to overcook it. Overcooked fish will be dry and tough.
- Use a Good Quality Olive Oil: Olive oil is a key ingredient in Greek cuisine, so make sure to use a good quality oil that has a fruity, peppery flavor.
- Season Generously: Greek food is known for its bold flavors, so don't be afraid to season your fish liberally with salt, pepper, and herbs.
- Serve with Fresh Lemon: Lemon is a classic accompaniment to fish, and it helps to brighten up the flavors in this dish.
Conclusion:
Athenian fish is a delicious and easy-to-make dish that is perfect for a quick and healthy meal. With its simple ingredients and bold flavors, this dish is sure to please everyone at the table. So next time you're looking for a quick and easy weeknight meal, give Athenian fish a try. You won't be disappointed!
