NONNA'S SAUCE AND MEATBALLS

1 pound ground pork
1 pound ground beef
4 cloves garlic, chopped fine
7 eggs
1 cup dried breadcrumbs
1 cup grated Parmesan
1 tablespoon dried parsley
The Saucee Sicilian Meat Sauce, recipe follows
1 beef short rib (see Cook's Note)
1 teaspoon extra-virgin olive oil
3 garlic cloves, chopped fine
1 small yellow onion, chopped
One 8-ounce can tomato paste
One 8-ounce can tomato sauce
1 1/2 teaspoons red pepper flakes
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon coarse ground pepper
1 bay leaf

Steps:

  • Preheat the oven to 400 degrees F.
  • Mix pork and beef in a bowl with your hands, then add garlic. Beat eggs and add to mixture. Add breadcrumbs, cheese and parsley and mix well. Scoop into meatballs and bake on a baking sheet for 30 minutes.
  • Simmer meatballs in Meat Sauce for 2 hours.
  • Brown beef short rib in olive oil in a saucepan on all sides until browned, about 2 minutes each side. Add garlic and onions and brown over low heat until translucent, about 5 minutes. Add tomato paste plus 1 paste can water, then the tomato sauce plus 1 sauce can water, and stir until blended. Add pepper flakes, sugar, salt, pepper and bay leaf and bring to bubbling. Turn temperature to low and simmer, covered, for 8 hours. Remove beef short rib and bay leaf before serving.

3 cups all-purpose flour
1 ¼ cups milk, or more as needed
1 cup raisins
¾ cup white sugar
2 tablespoons caraway seeds
1 tablespoon vegetable oil
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch round glass baking dish.
  • Mix flour, milk, raisins, sugar, caraway seeds, vegetable oil, baking powder, baking soda, and salt together in a bowl until dough is not wet enough to pour and not dry enough to handle. Add more milk if dough is too dry. Transfer dough to the baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes.

To a slow cooker chicken, I added an old family noodle recipe. If you want it to be more like a soup, add another quart of broth. This was a fixture at family reunions when I was a child, and the slow cooker makes it even easier.

2 carrots, sliced
2 onions, sliced
2 stalks celery, cut into 1 inch pieces
1 (4 pound) whole chicken
1 teaspoon salt
½ teaspoon ground black pepper
½ cup white wine
¼ teaspoon dried basil
2 eggs, beaten
¼ cup water
1 pinch salt
2 tablespoons shortening
1 cup all-purpose flour, or as needed
2 quarts low salt chicken broth

Steps:

  • Place the carrots, onions and celery in the bottom of a slow cooker. Place the whole chicken on top of the vegetables and season with salt and pepper. Pour in the white wine and sprinkle basil over the top. Cover and cook on Low setting for 8 to 10 hours.
  • In a medium bowl, stir together the eggs, water, salt, shortening and flour to form a stiff dough. After I've mixed in as much flour as possible using a fork, I knead the dough with my hand in the bowl to incorporate as much flour as possible. Let the dough rest for a few minutes.
  • Roll the dough out on a well-greased board to 1/8 inch thickness. Use a pizza cutter or pie crust cutter to cut into strips about 1/2 inch wide and 3 inches long. Dust lightly with flour, and leave to dry for a few hours while the chicken cooks.
  • When the chicken is done, remove the meat and vegetables to a platter. Transfer the juices to a large pot and stir in 2 quarts of chicken broth. Bring to a boil and add the noodles. Cook for about 10 minutes, until tender. Meanwhile, remove the meat from the chicken and shred. Discard bones and skin. When the noodles are done, return the vegetables to the pot and add shredded chicken meat. Serve.

I'm asked to bring this to every family function. This is my great aunt's recipe and when she could no longer make it, I took over. I hope you enjoy it as much as we do. You can use low-fat or fat-free cream cheese for this, but it will not get hard and form a ball. If you make it with low-fat ingredients, place the mixture in a bowl or decorative crock and top with crushed pecans. Cook time does not include chill time.

16 ounces cream cheese (softened)
1 (8 ounce) can crushed pineapple (drained well)
1 tablespoon seasoning salt
2 tablespoons onions (minced)
2 tablespoons green peppers (minced)
1 cup cheddar cheese (shredded)
2 cups pecans (finely chopped, divided)

Steps:

  • Mix all ingredients except 1 1/2 c chopped pecans with mixer till throughly combined.
  • Form into two medium balls or one large ball. Wrap in plastic wrap or wax paper and refrigerate till hardened (about 1 hour or so).
  • Remove from fridge and undo wrap and roll in remaining crushed pecans.
  • Enjoy with assorted cracker, we like Triscuits and Club crackers best.
