From an old Good Housekeeping magazine. I am a recipe pack rat because I made this recipe probably in 1992 and then packed it away and lost it! From what I remember, it was pretty good. In fact, one of my friends who was trying to be a vegetarian ate it and liked it!

Tips:

  • Use high-quality ground beef: Choose a leaner ground beef, such as 85% or 90% lean, to reduce the amount of grease in the dish.
  • Use day-old bread: Day-old bread will absorb more of the meatball mixture and help to bind it together.
  • Don't overmix the meatball mixture: Overmixing can make the meatballs tough.
  • Use a large skillet to cook the meatballs: This will help to prevent overcrowding and ensure that the meatballs cook evenly.
  • Don't overcrowd the skillet: Cook the meatballs in batches if necessary to prevent overcrowding.
  • Use a meat thermometer to ensure that the meatballs are cooked through: The internal temperature of the meatballs should reach 165°F (74°C).
  • Serve the meatballs immediately: Swedish meatballs are best served hot.

Conclusion:

Auntie Lori's Swedish Meatballs Casserole is a delicious and comforting dish that is perfect for a weeknight meal. The meatballs are made with a combination of ground beef, pork, and bread crumbs, and they are simmered in a creamy sauce. The casserole is then topped with mashed potatoes and baked until golden brown. This dish is sure to be a hit with your family and friends.
