AVOCADO-TOMATO GRILLED CHEESE SANDWICH

Avocado-Tomato Grilled Cheese Sandwich image

I LOVE avocados, especially the black Haas avocados. They're creamy and have such a "buttery" taste, and yet are cholesterol-free. This recipe makes a really delicious sandwich. When I make it for the kids, I eliminate the cumin, but add it when I'm making a sandwich for myself -- I like cumin's very mild spicy flavor that has a hint of caraway in it.

1 ripe avocado, halved, seeded and peeled
1 tablespoon lemon juice
1/2 teaspoon ground cumin

1/2 teaspoon finely minced parsley
8 slices bread (I use whole grain)

Time 20m

Yield 2 serving(s)

Number Of Ingredients 9

4 slices white bread
75 g tasty cheese, grated
1 tomatoes, sliced (I used vine-ripened)
1 avocado, sliced
1 onion, thinly sliced
4 olives, sliced (I used green olives with lemon pepper)
sea salt & freshly ground black pepper
oil
butter

Steps:

  • Heat oil in pan over med-low heat (or use non-stick pan)and fry onion until soft and lightly browned, adding tomato slices for the last minute or two of cooking time.
  • Meanwhile, divide avocado equally between two slices of bread, buttering the other two slices if desired.
  • Add all other ingredients except butter, then place second slice of bread on top pressing lightly to flatten sandwich a bit.
  • Wipe out pan (or use separate pan) and add a little butter.
  • After butter has melted, fry sandwiches until crisp and golden brown on both sides.

Tips:

  • Use ripe avocados: For the best flavor and texture, use ripe avocados that yield to gentle pressure. Unripe avocados will be hard and bitter, while overripe avocados will be mushy and brown.
  • Choose your cheese wisely: The type of cheese you use will greatly impact the flavor of your sandwich. For a classic grilled cheese, use a mild cheese like mozzarella or cheddar. For a more flavorful sandwich, try using a sharp cheddar, gruyère, or fontina.
  • Don't overcrowd the pan: When grilling your sandwich, make sure not to overcrowd the pan. This will prevent the sandwich from cooking evenly and will make it more likely to stick to the pan.
  • Cook over medium heat: Grill your sandwich over medium heat so that the cheese has time to melt and the bread has time to toast without burning.
  • Serve immediately: Grilled cheese sandwiches are best served immediately after they are cooked. This will ensure that the cheese is still melted and the bread is still crispy.

Conclusion:

Avocado tomato grilled cheese sandwiches are a delicious and easy-to-make lunch or dinner option. With just a few simple ingredients, you can create a sandwich that is packed with flavor and nutrients. So next time you're looking for a quick and easy meal, give this recipe a try!
