BEST NO-BEAN CHILI

Best No-Bean Chili image

Perfect for people who love using their slow cookers. I've tried many chili recipes but this one is the best ever! You can substitute beans for the cornmeal, but I think it takes away from the taste and the smooth texture. I recommend opening a second bottle of porter beer and drink it while cooking this tasty dish! Yum!

NO BEANS ABOUT IT - CHILI

No Beans About It - Chili image

My husband won't eat beans but LOVES chili, so I had to come up with this variation on an old favorite. Instead, it contains lots of canned tomatoes and onion. This is great served over rice with some shredded cheese and a dollop of sour cream. Ground turkey may be substituted for ground beef.

My husband and I created this recipe together. He won a chili cook-off with this recipe at work. We always use venison, but you can use ground beef or turkey.

Time 2h15m

Yield 6 serving(s)

Number Of Ingredients 17

1 lb ground beef or 1 lb ground turkey
2 onions, diced
1 green pepper, diced
1 tablespoon jalapeno, finely chopped
1 (14 ounce) can Mexican-style tomatoes (like Rotel)
2 (8 ounce) cans tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika (smoked if you can find it)
1 (14 ounce) can kidney beans, drained and rinsed
1 (14 ounce) can black beans, drained and rinsed
1 cup water
sour cream
cheddar cheese
green onion

Steps:

  • In a medium Dutch oven over medium-high heat add the olive oil. Add the ground meat and cook, breaking up into pieces, until browned. Add the onions, bell pepper and jalapeno and cook until softened. Drain excess grease.
  • Add the tomatoes, tomato sauce, cumin, chili powder, salt, cayenne, paprika and 1 cup water. Mix to combine.
  • Add the kidney beans and black beans, mix and bring to a simmer. Cover and cook for 1-2 hours.
  • Serve with desired toppings.

Tips:

  • Choose the right chili powder. Not all chili powders are created equal. Look for a blend that has a deep red color and a smoky, slightly spicy flavor. Brands that are part of the New Mexico True program are a safe bet.
  • Brown the beef well. This will help to develop its flavor and prevent it from becoming tough.
  • Use a variety of vegetables. This will add flavor, color, and texture to your chili. Some good options include onions, peppers, tomatoes, corn, and beans.
  • Don't be afraid to experiment with different spices. Chili is a versatile dish that can be customized to your own taste. Some popular additions include cumin, oregano, garlic powder, and cayenne pepper.
  • Let the chili simmer for a long time. This will allow the flavors to meld together and develop.
  • Serve the chili with your favorite toppings. Some popular options include cheese, sour cream, onions, and cilantro.

Conclusion:

This classic chili recipe is sure to please everyone at your table. It's easy to make, and it's packed with flavor. So next time you're looking for a hearty and satisfying meal, give this recipe a try. You won't be disappointed!
