BACON-CHEESE BISCUITS

Provided by Food Network Kitchen

Time 40m

Yield 18 biscuits

Number Of Ingredients 9

4 slices thick-cut bacon
2 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon kosher salt
1 tablespoon chopped fresh chives
6 tablespoons cold unsalted butter, cut into small pieces, plus melted butter for brushing
1 cup grated Colby or cheddar cheese
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Cook the bacon in a skillet over medium heat until crisp. Drain on paper towels and reserve 2 tablespoons drippings. Finely chop the bacon.
  • Whisk the flour, baking powder, baking soda, salt, chopped bacon and chives in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Stir in the cheese with a wooden spoon. Add the buttermilk and reserved bacon drippings and gently mix until just moistened. The dough will be loose.
  • Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with melted butter.
  • Bake the biscuits until golden brown, 12 to 15 minutes. Serve warm.

BACON CHEESEBURGER BALLS

Bacon Cheeseburger Balls image

You might be fooled into thinking you are eating plain meatballs until you cut them and see a creamy cheese and bacon filling. Make these for everyday and company meals as well as potlucks. Use them to top off spaghetti and fettuccine and sometimes even shape them into patties. Good with garden fresh chives and parsley sprinkled into the beef. Mozzarella and Swiss cheese are good substitutes for the cheddar. Try ground turkey instead of beef.

Tips:

  • Use a biscuit mix. This will save you time and effort. If you don't have a biscuit mix, you can make your own using all-purpose flour, baking powder, baking soda, salt, and butter.
  • Add your favorite mix-ins. Bacon is a classic addition to biscuit balls, but you can also add cheese, chives, jalapeños, or any other ingredients you like.
  • Don't overmix the dough. Overmixing will make the biscuit balls tough. Mix just until the ingredients are combined.
  • Drop the dough by rounded tablespoons. This will help the biscuit balls cook evenly.
  • Bake the biscuit balls in a preheated oven. This will help them rise and cook evenly.
  • Serve the biscuit balls warm. They're best when they're fresh out of the oven.

Conclusion:

Bacon biscuit balls are a delicious and easy-to-make snack or appetizer. They're perfect for parties, potlucks, or tailgating. With a few simple ingredients and a little bit of time, you can make these tasty treats that everyone will love.
