POTATO-GORGONZOLA GRATIN

Potato-Gorgonzola Gratin image

Get out your mandoline or the slicing blade of your food processor! If you'd prefer a milder flavor, substitute fontina or Monterey Jack for the blue cheese, but really, the gorgonzola isn't overpowering at all with all those potatoes. Wonderful flavor! (From Cooking Light).

Yield 4

Number Of Ingredients 13

¼ teaspoon salt
4 cups water, or enough to cover
1 pound red potatoes, scrubbed and cut into quarters
½ yellow onion, diced
2 slices thick-cut bacon, cut into 1-inch squares
2 stalks celery, diced

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the potato salad will be. Look for fresh, firm potatoes, and use good-quality bacon, gorgonzola cheese, and mayonnaise.
  • Cook the potatoes properly: The potatoes should be cooked until they are tender but not mushy. You can either boil them or roast them. If you are boiling them, start them in cold water and bring them to a boil. Once they are boiling, reduce the heat to medium-low and simmer for about 15 minutes, or until they are tender. If you are roasting them, toss them with olive oil, salt, and pepper, and roast them at 400 degrees Fahrenheit for about 30 minutes, or until they are tender and slightly browned.
  • Don't overdress the potato salad: You want the potato salad to be moist and flavorful, but you don't want it to be swimming in dressing. Add the dressing a little at a time, and stir until the potatoes are evenly coated.
  • Let the potato salad chill before serving: This will allow the flavors to meld and the salad to firm up.
  • Garnish the potato salad with fresh herbs or crumbled bacon before serving: This will add a pop of color and flavor to the salad.

Conclusion:

Bacon gorgonzola potato salad is a delicious and easy-to-make side dish that is perfect for any occasion. It is creamy, flavorful, and satisfying, and it is sure to be a hit with everyone who tries it. So next time you are looking for a new potato salad recipe, give this one a try. You won't be disappointed!
