  • In a large cast iron skillet over medium heat, cook bacon until crispy. Remove to a paper towel-lined plate. Discard bacon fat in the pan. In a food processor fitted with the grater attachment, push potato, onion and garlic through the grater. Remove mixture to a towel and squeeze out excess liquid. 1 tablespoon vegetable oil
2 slices bacon
2 large onions, diced
6 white mushrooms, thinly sliced

1 large egg

1 Tbsp butter, unsalted
1 small onion, diced
1 clove garlic, minced
2 medium zucchini, grated
10 oz potatoes, peeled and grated
1/2 tsp kosher salt
1 large egg
2 Tbsp all-purpose flour
1/2 tsp baking powder
1/4 c panko bread crumbs
1/8 c parmesan cheese, freshly grated
1/2 tsp black pepper
1/4 tsp paprika
sour cream or creme fraiche, for serving

  • 1. Place zucchini and potato into a colander over a medium-sized bowl. Sprinkle with salt and toss to coat. Let the mixture sit in the colander for about 10 minutes, then press down with a clean towel to squeeze out the excess water.
