12 fresh, jumbo sized shrimp, shells off, de-veined
12 oz Monterrey Jack cheese or other soft melting cheese, sliced into 12 sticks
12 strips regular fatty bacon (not center cut or thick sliced)

  • Prepare your grill for medium heat. Sorry non-grill folks, you can try making these in the oven but they just don't turn out as nicely. Wearing gloves, slice the jalapenos lengthwise without breaking all the way through. Make small cuts at the stem and tip so that you can open up the jalapeno without breaking it up too much. Use a small paring knife or spoon to scrape out all of the inside seeds and membranes. Clean them out really well unless you like a super hot popper. Insert a stick of cheese into the pepper. Next wedge as much of the shrimp into the jalapeno as possible with the tail end sticking out. Depending on the size of your shrimp and the size of your jalapenos this might be easy or hard. If there is not enough room just get as much of the shrimp in as you can. The bacon wrapping will hold them together. Wrap the shrimp and jalapeno tightly with a strip of bacon, stretching and overlapping slightly as you go. Secure the bacon with a toothpick. Repeat. Grill poppers until bacon is crisp and browned all over, turning as needed. The bacon fat will melt off and some cheese may melt out so watch for flare-ups.

12 fresh jalapeno peppers
12 slices bacon
24 Little Smokies sausages
1 (8 ounce) package cream cheese (room temperature)
2 teaspoons paprika
1 teaspoon cayenne pepper
your favorite barbecue rub (or Cayenne plus Brown Sugar)
favorite sweet barbecue sauce (cut with cran apple juice)

Steps:

  • you'll first want to wash and trim the jalapeno peppers.Chop the stem off and slice the pepper lengthwise to expose the seeds and vein. Using a spoon, scrape out the white vein and rinse under water to wash away the seeds. The cream cheese will ultimately counteract the burn from the peppers, so leave a good amount of the inner membrane in tact if you want to feel the heat.
  • In a mixing bowl, combine the cream cheese, paprika and cayenne pepper. Using a butter knife, or a pastry bag, fill each jalapeno half with a generous portion of the cream cheese mixture.
  • Top each one of the jalapeno "boats" with a little smokey.
  • Wrap each of the smokey topped jalapenos with a half slice of bacon, making sure that the seam is directly on top of the little smokey. Secure the wrap by inserting a toothpick straight down through the overlapping edges of the bacon all the way through the little smokey. Stop just short of going through the pepper though, that way the cream cheese doesn't leak out through the hole.
  • Since bacon already contains a good amount of sodium, you'll want to season the buffalo poppers with a sugar based rub. A nice blend of brown sugar and cayenne pepper works great on these bad boys as well.
  • Cooking the poppers is a matter of getting the bacon done to your liking. My preference is smoke at 250 degrees for about an hour and a half. At this point the bacon isn't overly crispy, but it's definitely cooked enough to be bite through. If you prefer a crispier bacon, then I'd suggest kicking the temperature up to 300 degrees for about an hour. You'll want to keep a close eye on the peppers though. If they overcook, then they'll loose their stability and your poppers will spill out all over your smoker.
  • once your poppers are cooked to your liking, remove them from the grill to cool down a bit before serving. At this point I would typically top them with a generous helping of Barbecue Sauce cut with a little cran-apple juice, but this time around I happened to have a bottle of hot raspberry sauce. I used this sauce a few weeks ago on some pulled pork sandwiches and was pleasantly surprised as to how well the raspberry flavor melded with the smoked pork, but this blew the sandwich out of the water. The flavor of the smokey jalapeno matches perfectly with the sweet fruity sauce, and of course it's heat is in good company with the medley of peppers tasted in each bite. A spoonful of sauce on each popper and you can guarantee these tasty treats will disappear in no time flat!

You can make these somewhat mild and super hot, what ever you like.

fresh jalapeno pepper, 12-24
16 ounces cream cheese
1/2 tablespoon chili powder
3 tablespoons of your favorite hot sauce
equal amount of bacon strips per bell pepper (raw)
1 tablespoon liquid smoke

Steps:

  • Core the peppers using the blunt edge of a potato peeler, save half the seeds removed, toss the core.
  • In a bowl add cream cheese, chili powder, hot sauce (you pick the heat) and liquid smoke and half the jalapeno seeds.
  • Mix/Mash together until blended.
  • Stuff the cored peppers with cream cheese mix then wrap with raw bacon. Use your fingers!
  • Kabob them, repeat untill all the peppers are stuffed and wrapped.

8 ounces (or less) cream cheese block softened
12 strips or one pound raw bacon

  • Preheat oven to 250 degrees Fahrenheit. Line a rimmed cookie sheet with foil and place a cooling rack on top. Cut stems off jalapeños, careful to keep peppers intact (do not cut into the pepper yet, just remove the outside stem). Wear gloves to hold jalapeños while cutting in half lengthwise. Remove veins and most of the seeds. While removing the veins and seeds, keep in mind each side of jalapeño will act as a "boat" holding the cream cheese, so be careful not to cut through peppers or the cream cheese will leak out. Leave a few seeds inside the "boats" for spice as desired. Using a knife, fill each half of the jalapeños with cream cheese. Wrap each half with one slice bacon. Place bundles on rack on top of cookie sheet. Bake for 45-60 minutes. 16 oz cream cheese
3 green onions
2 c cheddar cheese
25 jalapeno peppers
25 slice bacon
4 large eggs
4 Tbsp milk
16 tsp emerils essence
2 c panko crumbs
1 c flour

Steps:

  • 1. Preheat over to 350 degrees. Lay aluminum foil on two cookie sheets. Set aside. Wash and cut Jalapeno poppers in half. Set aside. Pre-cook Bacon about 7-10 mins. Cut slices in half.
  • 2. Mix together Cream Cheese, Green Onions, and Cheddar Cheese. Stuff each Jalapeno half with the Cream Cheese mixture, and wrap half a slice of Bacon around each one. Hold in place with toothpick.
  • 3. In a small bowl, beat together the eggs, milk, and 4 teaspoons of the Essence. In a shallow dish, combine the panko crumbs and remaining 8 teaspoons of Essence. In a third dish, combine the flour and remaining 4 teaspoons of Essence.
  • 4. One at a time, dredge in the flour, dip into the egg mixture, then dredge in the panko crumbs, pressing to coat. If necessary, repeat the process. Place the coated peppers, cut side up, on the prepared baking sheet and bake until the filling is runny and the crust is golden, about 40 minutes. Remove from the oven and serve immediately.
