  • Pour crushed crackers into beef. Mix the crackers into the beef mixture well.
  • Form into a loaf shape and set to the side.
  • Take the bacon and divide it into even amount.
  • Take 1 half of the bacon and lay side by side long ways.

  • Lay 1 of the other half of the reserved bacon strips across.
  • Unfold the half folded bacon strip.
  • Fold the other every other bacon strips that were not folded in the previous step.
  • Lay a slice of bacon across and then unfold.
  • Repeat until you run out of room.
  • Start on the other half of the bacon strip until you have made a weave.
  • Pace the loaf shaped beef mixture into the center on your bacon weave.
  • Wap the weave around the beef loaf shaped mixture.
  • Flip the bacon wrapped meat loaf upside down, making the ends of the bacon tuck under the loaf.
  • Place the loaf in the center of the oven on a cookie sheet.
  • It takes about an hour to cook.
  • To make sure it is cooked all the way through, I sometimes use a meat thermometer but that isn't really needed. Sometimes I leave it in for 15 more minutes if I am worried it isn't cooked all the way.

2 teaspoons vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
2 large eggs
1 teaspoon dried thyme

2 teaspoons Worchestershire sauce
1/4 teaspoon hot red pepper sauce
1/2 up milk, buttermilk or low-fat plain yogurt
2 pounds meat-loaf mix (2 parts ground chuck, 1 part ground veal, 1 part ground pork)

BACON-WRAPPED MEATLOAF RECIPE - (4.5/5)

Bacon-Wrapped Meatloaf Recipe - (4.5/5) image

Provided by á-4084

Number Of Ingredients 14

1/4 cup bottled barbecue sauce, plus extra for serving
1 tablespoon cider vinegar
1 tablespoon Worcestershire sauce
1 tablespoon spicy brown mustard
17 square or 19 round saltines, crushed (2/3 cup)
4 slices coarsely chopped bacon, plus 8 whole slices
1 onion, chopped coarse
3 garlic cloves, minced
1/3 cup whole milk
2 large eggs plus 1 large yolk
1/3 cup minced fresh parsley
3/4 teaspoon salt
1/2 teaspoon pepper
1 1/2 pounds 90 percent lean ground beef

Steps:

  • Adjust oven rack to upper-middle position and heat oven to 375 degrees. Line rimmed baking sheet with aluminum foil and set wire rack in sheet. Whisk barbecue sauce, vinegar, Worcestershire, and mustard together in bowl; set aside glaze. 2. Process saltines in food processor until finely ground, about 30 seconds; transfer to large bowl. Pulse chopped bacon and onion in now-empty processor until coarsely ground, about 10 pulses. Transfer bacon mixture to 10-inch nonstick skillet and cook over medium heat until onion is soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Set aside off heat. 3. Add milk, eggs and yolk, parsley, salt, pepper, and 2 tablespoons glaze to saltines and mash with fork until chunky paste forms. Stir in bacon mixture until combined. Add beef and knead with your hands until combined. 4. Lightly spray 8 1/2 by 4 1/2-inch loaf pan with vegetable oil spray. Line pan with large sheet of plastic wrap, with extra plastic hanging over edges of pan. Push plastic into corners and up sides of pan. Line pan crosswise with remaining 8 bacon slices, overlapping them slightly and letting excess hang over edges of pan (you should have at least 1/2 inch of overhanging bacon). Brush bacon with 3 tablespoons glaze. Transfer meatloaf mixture to bacon-lined pan and press mixture firmly into pan. Fold bacon slices over mixture. 5. Using metal skewer or tip of paring knife, poke 15 holes in one 14 by 3-inch piece of foil. Center foil rectangle on top of meatloaf. Carefully flip meatloaf onto wire rack so foil is on bottom and bacon is on top. Gripping plastic, gently lift and remove pan from meatloaf. Discard plastic. Gently press meatloaf into 9 by 5-inch rectangle. 6. Bake until bacon is browned and meatloaf registers 150 degrees, about 1 hour. Remove from oven and heat broiler. Brush top and sides of meatloaf with remaining 2 tablespoons glaze. Broil meatloaf until glaze begins to char and meatloaf registers 160 degrees, 3 to 5 minutes. Using foil as sling, transfer meatloaf to carving board and let rest for 15 minutes. Slice and serve, passing extra barbecue sauce. Test Kitchen Technique: That's a Wrap We found that using a loaf pan to wrap our meatloaf in bacon gave us the most consistent results with the least amount of work. 1. After spraying the pan with vegetable oil, line it with plastic wrap and eight slices of bacon. Brush the bacon with glaze. 2. Next, we press the meatloaf mixture into the pan, fold the bacon ends over the loaf, and top it with perforated foil. 3. Finally, invert the foil-topped loaf, bacon and all, onto a wire rack set in a baking sheet, remove the plastic, press the meatloaf into shape, and bake.

BACON WRAPPED MEATLOAF WITH COGNAC SAUCE

Bacon Wrapped Meatloaf with Cognac Sauce image

Number Of Ingredients 21

1 1/2 tablespoons butter
1/2 large onion, diced
1.5 ounces tomato paste
1/2 cup worcestershire
1/2 cup port wine
1/4 cup brown sugar
1/2 pound beef, pork, and veal (each)
1/4 cup roasted, chopped garlic
1 teaspoon basil and thyme, each
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups panko
1 1/2 eggs
1/2 pound bacon
1 teaspoon butter
1/2 large onion, diced
1/2 shallot, diced
1/2 teaspoon black peppercorns
1 cup cognac or brandy
1 cup beef stock
2 tablespoons whipping cream

Steps:

  • Make cognac sauce: In a medium pan, heat butter. Add onion, shallot, thyme, peppercorns and bay leaf and sauté until onion and shallots are golden brown. Add cognac and reduce by more than half. Add stock and demi-glace and reduce until it is thick enough to coat the back of a spoon. Remove from heat and strain. Discard solids. At this point, you can store this in an airtight container until ready for serving. (Cream will be added just before serving.)
  • In a large saute pan, melt butter. Add onion and cook over low heat 20 minutes, stirring regularly, until caramelized. Add tomato paste and cook 2 to 3 minutes. Add Worcestershire sauce, port and sugar. Set aside.
  • In a large bowl, combine meat, garlic, spices, eggs, panko and reserved onion mixture. Mix by hand to combine thoroughly.
  • Set about a 17-by-13-inch baking sheet horizontally in front of you. Line generously with heavy-duty foil. Foil should come well over ends of the pan.
  • Lay bacon slices horizontally on the foil so that they run from top of pan to bottom. You will have to overlap them slightly. On the right side of bacon strips, form meat into a loaf to cover the bacon strips.
  • Using the foil, roll the meat mixture over the remaining bacon to completely encase the meatloaf. Seal the open ends of the bacon by weaving a toothpick or wooden skewer through the strips. Set loaf, skewers side down, on the baking sheet and then cover completely in foil.
  • Preheat oven to 400 degrees. Set meatloaf on a baking rack over a jellyroll pan. Bake in preheated oven 1 hour, then remove meatloaf from oven and remove the foil. Return meatloaf to oven (setting it on the rack over the pan), and bake 15 minutes or until bacon is crisp.
  • Let cool slightly, then cut into sections. Set flat on a plate so bacon slices surround the meatloaf. Immediately before serving, add cream to the cognac sauce and bring to a simmer, then pour over meatloaf.

Tips:

  • Choose the right ground beef. For the best flavor and texture, use a combination of 80% lean and 20% fat ground beef.
  • Season the meatloaf well. Don't be afraid to use a generous amount of salt and pepper, as well as other herbs and spices that you enjoy. This will help to give the meatloaf flavor and depth.
  • Wrap the meatloaf in bacon before baking. This will help to keep the meatloaf moist and juicy, and it will also add a delicious smoky flavor.
  • Make sure the meatloaf is cooked all the way through. The internal temperature of the meatloaf should reach 165 degrees Fahrenheit before you remove it from the oven.
  • Let the meatloaf rest before slicing. This will help the juices to redistribute throughout the meatloaf, making it more tender and flavorful.

Conclusion:

Bacon-wrapped meatloaf is a classic dish that is always a crowd-pleaser. It is easy to make and can be customized to your own taste. Whether you serve it with mashed potatoes, roasted vegetables, or a simple salad, bacon-wrapped meatloaf is sure to be a hit.
