Nonstick cooking spray, for the wire racks
24 strips bacon (approximately 1 pound)
1 fresh pineapple, peeled, cored and cut into forty to forty-two 1-inch cubes
3 tablespoons honey
3 tablespoons Dijon or spicy brown mustard
3 tablespoons hot sauce
Dash liquid smoke

Steps:

  • Line 2 baking sheets with foil, and set wire racks inside each. Spray racks with nonstick cooking spray.
  • Cut the bacon strips in half crosswise. Tightly wrap a strip of bacon around each piece of pineapple and transfer to prepared racks seam-side down. Continue with remaining bacon and pineapple. Place in refrigerator for 20 minutes to chill.
  • Preheat grill for cooking over indirect heat or an oven to 450 degrees F.
  • Whisk together the honey, mustard, hot sauce and liquid smoke in a medium bowl. Set aside.
  • Put the baking sheets on the grill over indirect heat or in the oven (in batches if necessary) and cook until bacon starts to get crispy, carefully flipping bites once midway through cooking, 30 minutes per batch. Brush each bite with the honey mustard and let cook until bacon is crispy and glaze has caramelized, an additional 10 minutes.

1 cup pineapple juice
1 cup fresh orange juice
1/4 cup soy sauce
3 tablespoons dark brown sugar, firmly packed
1 large fresh pineapple, peeled, cored and cut into 1-inch pieces
12 slices bacon, cut crosswise into thirds

Steps:

  • Soak 36 toothpicks in water for 30 minutes; drain and set aside.
  • In large bowl, combine juices, soy sauce and brown sugar. Add pineapple, cover and chill 30 minutes. Drain pineapple, discarding marinade.
  • Preheat oven to 400°F Line a rimmed baking sheet with foil.
  • Wrap each pineapple chunk with 1/3 slice bacon and secure with a toothpick.
  • Place on prepared baking sheet and bake 30-35 minutes or until bacon is crisp. Serve warm.

½ pound sliced bacon, cut into thirds
1 (20 ounce) can pineapple chunks in juice, drained
½ cup packed brown sugar
½ cup mayonnaise
¼ cup chili sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Wrap each chunk of pineapple with a piece of bacon and secure with toothpicks. Place in a shallow baking dish. In a small bowl, stir together the brown sugar, mayonnaise and chili sauce; pour over the bacon wrapped pineapple.
  • Bake uncovered for 25 minutes in the preheated oven, until bacon is crispy on the edges and the sauce is bubbly. Serve warm.

2 (16 ounce) cans pineapple chunks, drained
1 (10 ounce) jar sweet-and-sour sauce
2 pounds bacon
1 box toothpicks

Steps:

  • Place the pineapple in a large bowl, and toss with sweet and sour sauce. Cover, and marinate overnight in the refrigerator.
  • To prevent burning, place toothpicks in a small bowl of water and soak 10 minutes.
  • Place a paper towel over a microwave-safe dish and arrange part of the bacon on the towel; cover with another paper towel. Cook the bacon in a microwave oven on medium just until partially cooked and still pliable, 2 to 3 minutes. Repeat with remaining bacon. Cut bacon strips in half.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet and set aside.
  • Wrap half a bacon strip around each pineapple chunk. Secure bacon with a toothpick, and place on baking sheet. Repeat with remaining bacon and pineapple chunks.

4 chicken breasts (boneless & skinless)
4 ounces small can pineapple chunks (in syrup for a sweeter flavor)
1/3 cup light brown sugar (enough to lightly cover each one)
1 lb bacon

Steps:

  • Preheat oven to 375 degrees.
  • Clean each chicken breast and cut into 4 pieces.
  • Wrap each piece of chicken with 1 strip of bacon (you can use a toothpick but it is not necessary if you tuck the bacon into itself).
