6 tablespoons butter, divided
3 large onions, halved and thinly sliced
1 tablespoon sugar
1/4 teaspoon salt
12 dried figs, sliced
1 cup water
3 tablespoons honey
12 slices slices Italian bread (1/2 inch thick)
8 ounces Asiago cheese, sliced
12 thin slices prosciutto
3/4 cup crumbled goat cheese
Balsamic glaze, optional

Steps:

  • In a large skillet, heat 2 tablespoons butter over medium heat. Add onions, sugar and salt; cook and stir until softened, about 15 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally., Meanwhile, place figs, water and honey in a small saucepan. Bring to a boil; reduce heat. Simmer, uncovered, until liquid is almost evaporated, about 20 minutes., Preheat panini maker or indoor electric grill. Layer 6 slices of bread with Asiago cheese, prosciutto, goat cheese, caramelized onions and figs; top with remaining bread. Spread outsides of sandwiches with remaining butter., Cook sandwiches, covered, until bread is browned and cheese is melted, 4-5 minutes. If desired, drizzle with balsamic glaze.

I made these vegetarian baguettes for a party last year and they tasted just fantastic. The combination of the herbed mild goat cheese, arugula, and the sweet onions and figs tastes great together.

2 tablespoons butter
6 onions, thinly sliced
2 tablespoons extra-virgin olive oil
1 pinch salt
16 figs, halved
3 tablespoons superfine sugar
½ cup chevre (soft goat cheese)
½ cup herbed goat cheese
1 tablespoon milk, or more as needed
1 bunch arugula
sea salt and ground black pepper to taste
2 baguettes

Steps:

  • Melt butter in a large skillet over medium-low heat. Mix onion with olive oil and add to skillet. Cook slowly until onions caramelize but do not brown, about 40 minutes. Stir occasionally. Season with salt and allow to cool, about 30 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Lay out figs, cut side up, onto a baking sheet and sprinkle with sugar. Grill under the broiler until sugar has melted, 3 to 5 minutes. Allow to cool.
  • Combine chevre, herbed goat cheese, and milk in a small bowl until creamy.
  • Cut baguettes in half lengthwise and spread goat cheese mixture evenly over lower halves. Layer caramelized onions over the goat cheese, then cover with arugula. Cut figs into quarters or slices, depending on size, and layer onto the arugula. Top with the remaining baguette halves and wrap baguettes in plastic wrap. Refrigerate so flavors can combine, 2 to 3 hours. Slice and serve.

¼ cup canola oil
1 large yellow onion, cut into thin slices
¼ cup small dried Mission figs
6 ounces goat cheese, softened
40 crackers

Steps:

  • Heat a skillet over medium heat; add oil. Add onion; cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 40 minutes more. Remove from heat and cool.
  • While the onion is cooling, cut the figs lengthwise into 1/4-inch rounds.
  • Layer 1/4 teaspoon goat cheese, 1/4 teaspoon caramelized onions, and 1 or 2 fig slices on each cracker.

3 medium onions, halved and thinly sliced
Coarse salt and ground pepper
1/2 cup fresh goat cheese (3 1/2 ounces), room temperature
8 thick slices country bread
1/2 pound ripe fresh figs (about 8), stemmed and thinly sliced

Steps:

  • In a large skillet, heat oil over medium. Add onions, and season with salt and pepper. Cover, and cook, stirring occasionally, until onions have softened, 8 to 10 minutes. Uncover; cook until onions are golden brown, 10 to 12 minutes more (if skillet begins to darken, add cup water).
  • Dividing evenly, spread cheese on 4 bread slices. Top with onions and figs; sandwich with remaining bread.
