Johnny cake is served throughout The Bahamas so it's not uncommon to find a variety of distinctive tastes. Different places and different islands have different recipes. This version is served at the Cricket Club, and is a standard, simple version.

1 c flour
3/4 c cornmeal
3/4 tsp salt
1 egg, beaten
5 tsp baking powder
1/3 c sugar
2 Tbsp vegetable oil
1 c milk

Steps:

  • 1. Preheat oven to 350F.
  • 2. Mix all dry ingredients together. Add egg, milk and oil to dry mixture and blend well.
  • 3. Pour into 8 inch square pan. Bake 30-35 minutes until slightly brown on top.
  • 4. Serve hot or cold with butter, honey or preserves.

2 1/4 tsp instant dry yeast
4 1/2 cups unbleached flour (plus extra , if the dough comes out too wet)
1 tsp salt
1/4 c nonfat dry milk powder
1/3 cup sugar
1 cup coconut milk (if you warm this slightly it will help the dough rise quicker)
3 tbsp honey
3 tbsp butter, softened
1/3 cup vegetable oil
3 eggs

Steps:

  • 1. In the mixing bowl of bread machine add all ingredients in order given. Set on dough cycle (just mixing and rising). The dough cycle usually lasts about 1 1/2 hours.
  • 2. Or... alternatively, add all ingredients to a large bowl and knead together until a smooth dough forms. Add extra flour if necessary. Cover and let rise in a warm place for about 1 1/2 hours.
  • 3. When dough cycle is complete, or dough is approximately doubled in size, remove dough and place in oiled baking pans. You can use a Pullman pan or two bread pans.
  • 4. Let dough rise in baking pans for 30 minutes.
  • 5. Preheat oven to 350F.
  • 6. Slash the top with a sharp knife and then bake for 35 minutes or until browned on top and cooked through.

3/4 cup hot water
1/2 cup quick-cooking rolled oats (3 minute)
1 1/2 tablespoons molasses
1 1/2 tablespoons butter or 1 1/2 tablespoons vegetable oil
1/2 teaspoon salt
1 1/2 cups bread flour
1 1/2 teaspoons active dry yeast

Steps:

  • Mix all the ingredients together and knead for thirty to forty seconds.
  • Let rise (about forty minutes) and knock down and knead for thirty seconds.
  • Repeat.
  • (Or let the bread machine do all the kneading and timing for you and go beach combing until it's time to cook the dough!) Allow final rise in a bread pan, about forty minutes, and preheat oven to 425 f.
  • Place in oven and decrease temperature to 350 f.
  • Bake for thirty minutes.
