24 ounces dry white beans
1 pound ham hocks
1 onion, chopped
½ cup packed brown sugar
½ cup maple syrup
1 teaspoon salt
1 cup water
½ cup ketchup
2 tablespoons prepared mustard

Steps:

  • In a large pot over high heat, combine the beans with water to cover and bring to a boil for 10 minutes. Remove from heat but let sit for 1 hour. Drain beans and place them in a slow cooker. Add the ham hocks, onion, brown sugar, maple syrup, salt and water.
  • Mix well, cover and cook on high setting for 4 to 5 hours, stirring occasionally. During the final hour of cooking, add the ketchup and mustard, remove the ham from the hocks and discard the hocks. Mix well and serve.

Baked Beans with Ham image

2 teaspoons canola oil
1 medium onion, diced
12-ounces smoked Virginia ham, cut into 1/4-inch cubes
2 cloves garlic, minced
Two 15-ounce cans navy beans (preferably low-sodium), drained and rinsed
One 15-ounce can crushed tomatoes (preferably low-sodium)
1/2 cup water
1/4 cup unsulfured molasses
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onion and cook until softened and translucent, about 5 minutes. Add the ham and garlic and cook for an additional 3 minutes. Stir in the beans, crushed tomatoes, water, molasses, mustard, vinegar, and pepper. Bring to a boil, then reduce the heat to a simmer. Cover and cook until about half of the liquid is absorbed, 15 minutes.
  • Yield: 4 servings

1 pound dry great Northern beans
½ pound cooked ham, diced
1 small onion, diced
½ cup brown sugar
salt and pepper to taste
¼ teaspoon cayenne pepper
1 tablespoon dried parsley

Steps:

  • Rinse beans in a large pot; discard shriveled beans and any small stones. Add 8 cups of cold water. Let stand overnight or at least 8 hours. Drain and rinse beans.
  • Return beans to pot and add ham, onion, brown sugar, salt, pepper, cayenne and parsley and water to cover. Bring to a boil; reduce heat and simmer 1 1/2 to 2 hours, until beans are tender. Add more water if necessary during cooking time.

1 can (15 oz) Progresso™ black beans, drained, rinsed
2 pouches (6.5 oz each) Betty Crocker™ cornbread & muffin mix
2/3 cup milk
1/4 cup butter or margarine, melted

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 3-quart saucepan, heat ham, barbecue sauce, onion and beans over medium-high heat, stirring occasionally, until thoroughly heated. Pour into baking dish.

1 pound dried navy beans
1 large onion (quartered and thinly sliced)
1/2 pound country ham (diced)
2 tablespoons vegetable oil
1/3 cup dark molasses
4 tablespoons brown sugar
1 teaspoon salt
1/4 teaspoon dried mustard

Steps:

  • Rinse the beans and pick over, discarding any discolored or malformed beans and small stones. Put the beans in a medium saucepan and cover with water. Bring to a boil and boil for 1 1/2 minutes. Remove from heat, cover, and let stand for 1 hour.
  • Add water to the pan to about 1/2 inch above the beans. Bring to a boil once again then reduce heat to the lowest setting, cover, and simmer gently for 1 1/2 hours. Do not boil the beans. Drain the beans, reserving the liquid.
  • In a small skillet, heat a few teaspoons of vegetable oil, or just enough to cover the bottom of the pan. Add the diced ham and fry until lightly browned.
  • Combine the reserved bean liquid with the molasses, brown sugar, salt, and mustard; stir to blend.
  • Heat oven to 350 F.
  • In a 3-quart casserole, layer the beans with the sliced onion and ham. Pour the liquid mixture over the beans so the liquid is even with the top of the beans. If necessary, add a little water.
  • Cover the casserole and bake on the center rack for 3 hours, stirring occasionally.
  • Remove the cover from the bean pot or casserole and continue baking, stirring occasionally, for about 30 minutes or until the liquids have reduced and thickened somewhat. Tip : Place a baking pan with about 1/2 inch of water on the bottom rack under the bean pot or casserole to catch spills. Add more water to this pan as necessary. The pan will not only help catch spills, but the water will also help keep the spilled food from burning.

I don't know where I got this recipe that I've been using for years but it is definitely a man pleaser! I think that a ham bone gives the best flavour but will use an 8 oz piece of salt pork when necessary.

2 (16 ounce) packages dried navy beans
4 teaspoons salt
3/4 cup dark molasses
1/2 cup packed dark brown sugar
1 tablespoon dry mustard
1 teaspoon pepper
1 large onion
4 -6 whole cloves
1 meaty ham bone

Steps:

  • Prepare beans: Rinse well and discard any stones or shriveled beans.
  • Soak beans in water in a 5 quart Dutch oven, using the overnight or quick soak method.
  • Overnight Method: Cover each cup of dried beans with 3 cups of water; let stand for a minimum of 12 hours.
  • Quick Soak Method: Add beans to boiling water, allowing 3 cups of water for each cup of beans, bring back to the boil and boil for 2 minutes; remove from heat, cover and leave for an hour, then cook in same water.
  • Bring mixture to a boil, add salt, reduce heat, cover and simmer for an hour.
  • Stir in molasses and next 3 ingredients.
  • Stud the onion with the cloves; tuck onion & ham bone (or salt pork) into the beans.
  • Cover and bake in a 250F oven for about 7 hours; check & stir about once an hour.
  • Add more water to keep beans moist but not too wet OR remove lid to thicken mixture through evaporation; it all depends on your preference for thick or runny!
  • Discard cloves, chop onion and return to mixture.
  • Remove meat from ham bone (or cut salt pork into pieces, discarding fat) and return to mixture.
