Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine sour cream, lemon juice, and paprika in a bowl until well combined. Place stuffing mix in a shallow bowl. Dip chicken breasts into sour cream mixture so both sides are covered, then dip into seasoned stuffing mix on both sides. Roll each chicken breast up and place into a glass baking pan.
  • Melt butter in a saucepan over medium-low heat and drizzle over the chicken breasts in the baking pan.

2 lbs of center cut bacon
1 (15 ounce) can chipotle chiles in adobo
1 cup sour cream
1/2 cup milk
2 chicken bouillon cubes

Steps:

  • Pre-heat oven to 350°F.
  • Wrap chicken breast in a slice or two of bacon depending on size of breast vs. size of bacon.
  • Place wrapped chicken breast onto a non-stick oven safe baking sheet/dish.
  • Cook until completely done, usually takes about an hour, hour and a half.
  • When chicken breast lack about 20 mins from being done, you can start preparing the chipotle sauce.

1 1/2 c panko bread crumbs
2 pkg dry ranch dressing mix
1 Tbsp hungarian smoked paprika
2 tsp black pepper
1 Tbsp granulated garlic (not garlic salt)
1 c parmesan cheese, grated
3/4-1 c hidden valley ranch salad dressing

Steps:

  • 1. Preheat oven to 400 degrees F. These are the main ingredients used in this recipe. Spray a shallow jelly roll type pan with non stick cooking spray & set aside till needed.
  • 2. Using a bowl or reclosable bag, Combine Parmesan cheese with the Panko bread crumbs along with the spices and Dry ranch dressing mix packages. Shake to blend together.
  • 3. These are the 2 Boneless skinless chicken Breast that I cut into 3 pieces each. When you can make a meal for 6 for under five dollars you are doing good.
  • 4. Add the Ranch dressing to a platter or plate. Set aside till needed.
  • 5. Measure out about half of the Panko crumb mixture onto a plate, pan or platter. Repeat as needed. The reasoning behind this is, if you have some of the mixture left over, you can store it in the freezer for next time, and it has not been contaminated with the wet chicken pieces.
  • 6. Coat each piece of chicken breast with the ranch dressing by brushing it on or dredging it in the dressing on all sides. Allow excess to drip off.
  • 7. Now place the coated chicken Breast into the seasoned bread crumbs, and coat all sides. Then place into shallow baking pan. Repeat until all the pieces of chicken have been coated with the bread crumb mixture.

8 oz chicken breasts, halved, boneless and skinless
1/2 c butter, melted
1/2 tsp garlic salt
1 tsp paprika
3 Tbsp lemon juice
1 c sour cream, room temperature
1/2 c sherry
8 oz mushrooms, drained

Steps:

  • 1. Preheat oven to 375.
  • 2. Sprinkle chicken with garlic salt to taste.
  • 3. Mix together melted butter, paprika and lemon juice.
  • 4. Brush chicken well with butter mixture and place in shallow baking pan.
  • 5. Bake, tented with foil, about 30 minutes or until tender, brushing with remaining butter mixture occasionally to keep from drying.
  • 6. In a bowl, blend together sour cream, sherry or broth, mushrooms and pepper.
  • 7. Pour over chicken for last 15 minutes.

I just have to say that the smells drifting from the kitchen are to die for when you are making this dish. I decided to add a gravy and that in its self is wonderful:) I adapted this recipe from Audrey M. at Food.com dated Oct. 14, 2005

2 Tbsp all purpose flour
1/8 tsp salt
1/8 tsp fresh black pepper
4 boneless skinless chicken breast
pam cooking spray
1/2 c maple syrup
1 tsp dried thyme
1/2 tsp poultry seasoning
1 medium red onion, thinly sliced
1 can(s) chicken broth

Steps:

  • 1. Preheat oven to 350
  • 2. In zip lock bag stir together flour, salt and pepper. Dust chicken with flour mixture, patting off excess.
  • 3. Coat a large frying pan with Pam spray. add chicken and brown on both sides, about 3 minutes per side. Transfer to oven safe baking dish.
  • 4. Stir together, maple syrup, thyme and poultry seasoning and pour over chicken. Lay onions on chicken and gently pour chicken broth all over chicken and onions.
  • 5. Cover with foil and bake 1 hour, basting occasionally with pan sauce.
  • 6. To make sauce
  • 7. When chicken is done, transfer chicken and onions to plate and cover with foil to keep warm
  • 8. Pour juices in frying pan, bring to boil. Mix 2tbsp cornstarch with enough cold water to make a creamy liquid. Slowly stir in cornstarch mixture a little at a time to the boiling broth and whisk constantly until you reach your desired gravy consistency. Serve over chicken.
