Yield 4 servings.

Number Of Ingredients 7

4 bone-in, skinless chicken drumsticks
4 bone-in, skinless chicken thighs
Coarse salt and freshly ground pepper
1 large egg
2 cups crushed cornflakes
1 tablespoon olive oil
1/4 teaspoon cayenne pepper (optional)

Steps:

  • 1. Preheat oven to 400°. Rinse chicken, and pat dry. Season generously with salt and pepper. 2. In a small bowl, whisk egg with 1 tablespoon water. In a large bowl, mix cornflakes with oil, cayenne, and 1 teaspoon salt. 3. Working with one piece at a time, dip chicken in egg mixture, then coat with seasoned cornflakes, pressing flakes to help them adhere. Transfer coated pieces to a rimmed baking sheet. 4. Bake until golden brown and crisp, about 30 minutes. Sprinkle with salt and pepper before serving.

Tips:

  • To achieve a crispy coating, use a combination of melted butter and mayonnaise to coat the chicken strips. This helps the cornflakes adhere better and creates a golden brown crust.
  • For a more flavorful coating, season the cornflakes with paprika, garlic powder, onion powder, and dried thyme before crushing them. This adds a savory and aromatic touch to the chicken.
  • Use panko breadcrumbs as a substitute for cornflakes if you prefer a lighter and airier texture. Panko breadcrumbs are Japanese-style breadcrumbs that are made from white bread and have a flakier texture than cornflakes.
  • To ensure that the chicken is cooked through, use a meat thermometer to check the internal temperature. The chicken should reach an internal temperature of 165°F (74°C) before serving.
  • Serve the baked cornflake chicken with your favorite dipping sauce, such as honey mustard, barbecue sauce, or ranch dressing. You can also serve it with a side of vegetables or mashed potatoes.

Conclusion:
