2 eggs
1 cup milk
1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

2 beaten eggs
1/2 cup milk
1/2 cup finely chopped saltine
1/2 cup finely chopped onion
1/2 teaspoon dry mustard
1/8 teaspoon pepper (i like a little more)
1 lb fully cooked ground ham
1 lb ground pork
1/2 cup brown sugar
2 tablespoons vinegar
1/2 teaspoon dry mustard

Steps:

  • combine eggs, milk, saltines, onion and 1/2 tsp dry mustard, and pepper.
  • Add ham and pork.
  • Mix well.
  • Shape into loaf and place in a 13x9x2 baking pan.
  • Bake at 350 for 1 hours
  • For Glaze: combine Brown sugar, vinegar, and 1/2 tsp dry mustard.
  • Spoon glaze over loaf.
  • Bake additional 20 minutes, basting with glaze.

One 1-pound loaf frozen bread dough
Nonstick cooking spray
All-purpose flour, for dusting
1/2 pound shaved Virginia ham
1/2 pound Irish Cheddar or other white Cheddar, grated

Steps:

  • Thaw the bread dough overnight, then bring to room temperature before rolling (but don't let it rise).
  • Preheat the oven to 325 degrees F. Spray a loaf pan with nonstick cooking spray.
  • On a lightly floured work surface, roll the bread dough into a 9-by-12-inch rectangle. When rolling, if the dough springs back, cover with a dry towel and let it rest for 5 minutes.
  • Shingle the ham slices onto the dough, leaving a 1/4 inch of exposed dough on all sides. Sprinkle with the cheese and roll the dough into a large log, pinching together the seam and tucking the ends under to seal completely.
  • Place the log, seam-side down, in the prepared loaf pan and bake until golden brown and cooked through and the internal temperature is 200 degrees, for 50 minutes to 1 hour.
  • Let it sit for at least 10 minutes. Remove from the pan. Slice and serve.

2 pounds ground ham
1 ½ pounds ground pork
2 eggs
1 cup dried bread crumbs
1 cup evaporated milk
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 cup brown sugar
1 tablespoon mustard powder
¼ cup cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork, eggs, bread crumbs, evaporated milk, salt and ground black pepper. Mix all together well and form into a loaf. Place loaf into a lightly greased 9x13 inch baking dish.
  • Bake at 350 degrees F (175 degrees C) for 90 minutes.

1/2 cup skim milk
2 3/4 cups ground cooked ham
